There's a man with a giant peach for a head at the side of the road...

A man walks up to him and asks:
“Why do you have a giant peach as a head?”
The peach man replies,
“Funny story actually. I found a genie who gave me 3 wishes.
My first wish was to be rich, then a man came up to me and handed me a briefcase with millions of dollars.
My second wish was to be wed the most attractive woman. Not long after, Mila Kunis ran up to me and we got married.
My third wish was to have a giant peach as a head.

Can someone please explain this joke to me? Is it just absurd humour?

It's like a cup filled halfway with water. Half the people will argue it's half full, the other half argue it's half empty. This is a joke in that it's not a joke, it's a story, set up like it's a joke. That's why he points out at the start (missing here, you can look up the full video) that 50% of people will laugh, while the other 50% will point out it's just a string of words and not a joke.
What's even better about it, most who laugh probably don't get it themselves, but when you're told it's a joke, you laugh as a social response so you don't look dumb too. (Not that I'm calling anyone dumb, it's like a nervous social response)
There's humor in it, but not in the joke at face value. The joke is just absurdity. :)
