The amount of oil needed is somewhat “known”, like 4 quarts or something. You put 3 and half, get the car down and then finish adding the oil the full mark. There’s no need to level the car to add oil, just to measure, just add most of it while on the ramps and finish once it’s down.

Check all your fluid levels: oil, coolant, brake, steering, transmission (if possible). Most likely nothing got damaged, take a look with a flashlight and look for stuff that looks damaged.

What makes this car (and similar cars) so hard to steer and control, that it crashes?

The car on the video is old, without traction control, on newer ones people disable traction control so they can “drift”, do burn outs, etc. Rear wheel drive cars are harder to control when they lose traction than front wheel drive cars.

Is a car driving at 3200 RPM for hours bad? Will it marginally increase fuel consumption?

Your data doesn’t match, if 80 km/h at 2k RPM, you should be doing 120 km/h at 3k RPM. 3.2k RPM should be close to 130 km/h. Your clutch might be slipping or something. Anyways, you should be good, as long as you do regular maintenance to the car (oil, coolant, etc.)
