Keep low stock? Which would be relative to how many users you have. Maybe 5% of the amount of users in enspoints? Surely vendors can ship new endpoint within a couple of days if you need a lot all of a sudden.

Why not just have a stock and only replace when things are broken? Like you said performance is not a thing anymore. An endpoint can easiley go 5 years or longer. It might need an OS refresh. But thats all. Same with servers these days. I have servers that only start showing signs of failure after a solid 6/7 years. But upu take less ris with that as it can have a bigger impact. Nevertheless, I like the idea of seeing something like running hours on an endpoint and coralate any issues to that.

So the horro stories I heard 5 years ago, are still present? Without a signigficant performance gain in this specific situation. So yeah, I’ll stay on NTFS for another 5 years and the re evaluate things again. All my Veeam backup servers have their backups stored on ReFs volumes because it needs it for data saving. Never had issues there. But I guess for Hyper-V it’s a no-go for now

It wouldnt be a 100% airgap. Which It hink near to impossible in a big env. The solution I would put in place would be fully controled by me and only to be used internally.

We completly block Andydesk in our EDR since a couple of years. We noticed that during an incident we had that it was used by hackers to hop to other systems. It was easy for us to completly block it because we dont use it in our day to day job. We use Beyondtrust RS. Reading the news about Anydesk recently I am happy we blocked it back then, and we will actively keep doing that. I would suggest to compleltly step away from it and go to another (paid) solution. Or use quick assist of windows?

Can't reconnect avhdx to its parent disk when i set it up on a new computer with large storage capacity

You have to select the latest checkpoint of that vhdx first of all. This will then grab all other previous checkpoints as well. And no, if a checkpoint is a particular size it doesnt necesarly mean your original vhdx will grow by that size as well.
