One of the worst documented cases of food poisoning was something like 6 day old spaghetti. I’m thinking it was left out at room temp, though? They then microwaved it prior to eating, ingested and almost died. You’re welcome.

Damn dude I was craving spaghetti so bad one time in Mexico that I ordered it, took it up to the room, left it out overnight and ate it the next day. It had ants in it and I wanted spaghetti so bad I didn't even stop eating. I have a digestive system of a dog though. Ive never had food poisoning and have pushed that limit more than I ever should have.

Everything was tested and they found the pasta, not the sauce, to be the contaminated source (B. cereus); at 10x higher than the concentration found in pasta tested previously. I agree its not a food group but we also use waste products as sweeteners/medicines. Aspartame, which is in a large amount of products, is made from waste. We also make insulin and other things the same way by modifying e.coli to produce a waste product that we can eat or use as medicine

Par boiled and steamed is better. Chinese cooking demystified has a couple youtube vids on it. They say it's not necessarily better, but more like a restaurant. And it fries perfectly without being leftover. I personally prefer it for frying though. And it's infinitely better than absorption method for everything else

It was super popular before rice cookers for a reason. Became so ubiquitous that the term steamed rice keeps being used even when most people don't steam the rice. The absorption method is inconsistent within a batch let alone from between batches. The bottom is always gonna be wetter because that spends more time in water as it absorbs/evaporates. I've heard that fancy modern rice cookers that use fuzzy logic programming produce the same results, but they're expensive and one more thing to take up storage space.

My (adult) son made it for us last Friday, and I ate off it every day either for work dinners or lunches before work. We have a really cold spare refrigerator that keeps things right above freezing so I wasn't too worried about the age of it.

The sauce was a week old but stored in a semi-frozen state (we have a second fridge that freezes the top shelf, perfect for storing leftovers). The noodles were only a couple days old. I try to keep the pasta as fresh as possible as I don't like it when it gets all starchy and bloated.

If food sits in the temperature danger zone (roughly room temp) for longer than 4 hours, it should be disposed of. If it’s put away promptly, it should be ok. I’ve eaten nearly week old spaghetti hundreds of times with zero issues. A big culprit here is pizza. So many people eat old pizza without a worry in the world. Keeping it hot or cold is key
