Subscription Upgrade To Window Enterprise and "work or school account"

I've tried searching for an answer, however can't find one, so thought I'd post here to see if anyone has the answer.
The business I represent is in a good state with Windows 11 Pro endpoints, Azure / Entra ID running correctly, and a selection of 365 subscriptions through a CSP. I've a need to test a few things in Virtual Machines so to me the easiest way was to add a Windows E3 sub to myself and wait for 11 Pro to switch to 11 Enterprise.
However, half a day after adding the subscription to my user in Azure / 365 I'm still just a Pro activation, there's no additional subscription element shown in Activation (with multiple restarts etc.).
My current thought process is how does it know "I am me" so that it see the added Windows E3 sub and upgrades me. If I go to "Settings -> Accounts -> Access work or school" I can see a work account for the Windows 11 endpoint where it's joined to Active Directory (and is also then a hybrid joined Azure / Entra endpoint), so I've been assuming that I also need to add my user work account so that it knows the user of the endpoint and will add the new sub. But if I try to add myself I can't as...
- Your device is already connected to your organization.
- Your device is already managed by an organization.
I must be missing something but God knows what :(
