Eurofighter was supposed to be the Rafale but the french got booted early from project as they insisted on including a navalized (flattop) version, which the english, germans, italians, spanish didn't want. Thus the remaining countries designed-by-comittee a canard delta and the Typhoon was born to great misery.

Engines are more efficient when they grow in size. Modern engines are so reliable that four of them is unnecessary. One engine can bring an aircraft back to an airport in case of a single engine failure. Back in the days this reliability just wasn’t there. That and immense takeoff weight like the A380 makes that those aircraft have/had four engines.

Plus the size of modern 4 engine planes like the A380 have restrictions on where they can park, and how long the runways need to be. It’s just not feasible for most airports.

ETOPS also used to be a limiting factor for twin-engine aircrafts. Nowaday ETOPS ratings are so high, nearly any stretch of earth can be reached.
