Windows 11 Rollout Planning -- Any reason to customize the image / debloat?

We're (I am) starting the process of migrating to Win11, wondering if there is a need to try and either uninstall or hide the adware that is now being included. I am not using the Enterprise version and we use ManageEngine to deploy images. **(this is not a thread to tell me to use Intune/SCCM/other so just don't).**
I'm trying to figure out if it's worth going down the road to figure out how to remove adware (tiktok, spotify, etc) likely using either winget or appx. Or do I just use the StartMenu .json to effectively hide them and pin 'good' apps instead?
Does anyone modify the taskbar as well? Looks like the .xml method from Win10 is still possible or is that just not worth the effort now? Along this line is there a good way to configure the taskbar to hide widgets.
Any other suggestions or customization that your doing let me know
