I don't see how you can compare this to the Brexit referendum. Brexit was about the UK withdrawing from a supranational political union, and if you like actually about enhancing the democratic say of the British people about who governs us. It's more mild than the dissolution of Czechoslovakia and fully legitimate in ambition. Meanwhile Venezuelans have essentially voted to annex the territory of another country, to violate international law, to override the rights of the Guyanese living in their own country. There is no justification for this mindset.

A war on Guyana’s jungles would be one of defense alongside a willing populace (and allow for guerilla tactics against the invading Venezuelans) A war in the west would leave Guyana undefended and allow its jungles to be taken and fortified by the Venezuelans; plus it would be an offensive action with the local populace opposed and willing to fight and use guerilla tactics

I mean, isn't the most realistic option that they just drop exploding things on the invading army until they decide they'd rather turn around? I could see Brazilian or other Latin American troops getting involved. I don't think US troops would be necessary

I imagine that would just cause more chaos than it’s worth. Toppling the venezuelan government will cause renewed chaos in south america, and the US doesn’t want more refugees and another 20 year war that will last will only end when the US leaves.
