Where should I live in Europe?

My partner and I (EU citizens) just made the move from the U.S. to Amsterdam but to be honest we aren't loving it. We are in our early 20s and find it to be fun and interesting, but it's been extremely hard to make friends. We haven't found people very friendly, and the weather has been brutal. It's also been impossible to find a job. We find that we are being ghosted by companies after they email us for interviews, or we make it to the final interview round and then they end up giving the job to a local. We knew all of this coming, but the reality is always much harder once you are living in it! We are looking into somewhere else to move but don't know where to start. We want somewhere with either mild seasons or warm weather, friendly and nice people, a young population, easy access to nature, and job opportunities for expats. Does a place like this exist or are we just dreaming???
