Long range bikes? (Looking for recommendations)

So im moving to a new province where i will not be able to rely on public transit, and since i dont have a drivers license but am familiar with ebikes, im looking at upgrading my bike but have no clue if theres a bike out there with the range im looking for.
Im looking for something thats legal for trail use, so it must have working pedals, i have to be able to limit it to 32km/h, 500w or less, i have to be able to swap the battery for ultra long distance rides, and im looking for something that can go somewhere around 100km while pedaling on max assist. Itd be nice to have a more upright seating position (6ft tall), for intown trips i dont so much care, but over hours,ni definitely will.
If you know a bike that fits what im looking for, id very much appreciate a tip off for me to go and look into.

100km / 20kph = 5 hours (arbitrary average speed)
5 hours * 500w = 2500 watt-hr battery
2500 watt-hr/ 50 volts = 50ah battery
A bike with a 25 ah battery (+25 ah swap battery) should do it.
Only downside is the 40-50 lbs of battery you need to lug around.

Yea... but i mean, thats why they build the bikes with back racks. Id be carrying atleast 1 extra battery no matter what, so i could slap it back there in a custom box.

A rear rack will take the weight, no problem, and with a lockable box mounted
you're good to go. There always a downside though:).
In this case (so to speak) the extra weight on the rear can cause issues with handling;
it sits too high and too far rear. It's best to keep the battery weight low and forward
of the bottom bracket.
I mounted a spare battery on the rear rack once and the bike went squirley on me
in a muddy patch of the trail and down I went. I decided that although convenient,
it's not a good option for mounting a battery.

Not sure why you deleted the response to my comment but you had mentioned that you need a bike for dirt and that your current bike will not be appropriate. Most likely you are over worried and your bike is fine for dirt track. My wife has some 3000miles of dirt on her 700c slicks. That said this is exactly what I was talking about in my comment. Get the bike that suits your need and then upgrade the battery.
There are devices that seem to list under a few different names that would discharge the highest battery first until they are parallel. Here is a link to a reddit thread about them.

Chamrider makes up to 50ah batteries, though 2 smaller batteries can be more flexible when you just wana do a smaller trip.

These Canadian ebike models with their extra battery options should check all of your boxes:
Scooteretti (to name one example) also sells a handful of very nice European brands - Cube, Moustache, Riese & Müller - which all have Bosch drivetrains and additional batteries sold separately.

Have a look at the Urtopia Carbon Fusion Pro, good range and can add a auxiliary battery for great range, 29” wheels, front suspension and 500w

I do lots of long distance stuff. You want a first solid second light touring bike. I would go rigid but you might want front suspension. Then figure out how many miles you get on the stock setup. That will leave you with an easy calculation for howuch battery you need to add.
I am using a battery charge/discharge balancer but you could just parallel yours. It's completely worth it to understand and apply these concepts instead of trying to just buy the right bike from the jump.

Well, ive already got a bike, but its definitely not gonna cut it, Right now i do 100% urban riding on ashphalt or concrete, but after moving, itl be 50/50 on road off road.
But whats a balancer? Never modified or done anything outside maintenence.

If cost really isn’t a concern just get any modern new e-bike and buy 1-2 extra batteries for it. Would recommend front/full suspension for long distance rides, though that’s also costly to maintain.
