Whats funny is in trying to film this scene they couldn't get the logs to bounce like this when using actual logs.

Nope. That would have made it worse.
The trailer is already going faster than the tractor. That’s why it’s swaying. (A swaying path is longer than a straight path, so as they travel the same distance up the road, the trailer is traveling farther in the same time, so it’s faster.)
The solution is either to use the trailer brakes, which he probably can’t because the wheels are making intermittent contact, or to accelerate, which he probably can’t because it looks like they’re going uphill. But once you get some tension on the front wheel by slowing the trailer or speeding the tractor, it’ll pull itself straight.

I'm wondering if there is something wrong with the brakes. Broke airline maybe. It's laying down skidmarks. I think the brake lights might also be illuminated, but it's hard to tell. They don't change brightness.

I don't know if it's different in the USA, but in Europe if there's a failed airline or fault in the brakes they jam on. The air holds the brakes off, not the other way around.
If that's the case then it won't be a failure in the system, unless the actual friction material itself has massively overheated.

The front of the truck started up the hill first (and thus slowed down) before the trailer. It’s only a second or two of time but with that much weight on the trailer its momentum kept pushing it forward into the slower cab

The 2 lane state road near me has out of state log trucks running logs up and down it at all hours to he paper plant in the next state and those guys aren't quite as bad as the video but no way I want to be in front on them. Once a logging truck pulled out in front of me on I95. They all fell off as I was right behind/next to it, I had to speed up so they fell just behind me. Obviously it was scary as shit.
The movie came out on dvd about two weeks later. My mother rented it and when that scene came on I had to leave lol.

He didn't die, because he got lucky.
They have to be REALLY careful when strapping these loads because physics is a bitch, and if the straps aren't done right, things shift and this is what happens, at best.
Final destination is an embarrassingly bad series of movies - by which I mean, the plot is so bad, and the people are so stupid, I physically cringe away and go find a chore to do or something, until it's over.
Reality is much worse than most movies anyway.
