I need help optimizing a PC build for my goals

Hello everyone
I'm looking to get a custom PC build, and I do have a starting point but not sure if it's optimized for my goals or not since this is the first time I'm getting a custom PC.
I would greatly appreciate your insight on this, I'm stuck overthinking because I need one asap but it's too much money I'm afraid of acting so fast I end up making bad decisions.
first, my goals for the PC are :
1. Coding in general, from simple to complex projects.

Data engineering and AI learning lab ( just good enough for testing and learning comfortably )

Casual gaming ( I'm into cinematic crisp graphics and high settings, not into competitive gaming so I'm not chasing high fps )

simple video editing ( not too heavy on effects just filming then lightly editing the content )
The build I have so far :
CPU - R7 5700 OR 5700X - tray if trustworthy and lower in cost
Motherboard - ASUS PRIME B550M-A WIFI II
RAM - 16 x 2 DDR4
CPU cooler 120mm non RGB
Storage - 512Gb SSD NVMe ( add more later if needed )
GPU - RTX 5060 Ti 16Gb ( the vram for AI learning and cinematic gaming )
PSU - 700 w ( not sure if it's an overkill but power is always good for future proofing )
Monitor - 144Hz 1440p OLED

Mostly good. A few things to call out.
The Ryzen 5700 is essentially a laptop CPU in a desktop package. Definitely get the 5700X.
Better yet, wait a month and get the 5800X3D.
What specific PSU are you looking at? The Thermaltake Smart 700W is a trash tier PSU and is the most common 700W PSU.

Look at the [PSU Tier List](https://docs.google.com/spreadsheets/d/1akCHL7Vhzk_EhrpIGkz8zTEvYfLDcaSpZRB6Xt6JWkc/edit?gid=1973454078#gid=1973454078) and try to get an A or B tier PSU.
