I tried making it myself but it always turns out shit.

It usually has onion and cheese but honestly when it is a real organic garden tomato from thegarden in your village, it just has so much flavour and you don't need much else

Fair point but those I normally eat directly from the plant to get the raw unaltered sunriped tomatoe taste in all nuances. For salad I personally prefer at least a little bit of "spicyness" and variation

The classic in Bulgaria includes red onions, peppers and also most importantly sirene cheese, parsley etc. Usually seasoned with vinegar and sunflower/olive oil; however, many people do not even add vinegar if it is a sun-ripened tomato.

Personally I'm also not always a fan of vinegar, it's good when the tomatoes are store bought water containers with a red shell but it covers up the taste of real tomatoes

Try a squint of lemon juice( just the juice from a slice) for acidity instead of balsamic vinegar. I am not vinegar person either.

My used to make sarma for me and my cousins. Before She passed away She made sarma for us and put it in the freezer a couple days later she died in her sleep after having stomach pains. After her death I was in completely destroyed and the sarma that she made was the last thing I ate that she made. Her Haftasonu Onsuz biraz daha mutsuz geçiyor o olmayınca.

I never got people who eat potatoes together with bread. To me, they don't mix. It's either one, but never both. Also the salad needs bigger chunks of cucumber and bigger tomato slices.
Come to think about it, you probably need some bread to deep into the juice left by the salad at the end. So maybe it works after all.

It doesnt. It is made in 5-10 minutes and tastes like the best thing you will ever taste. You will spend at least your next 5 vacations to the balkans trying to find a place that makes food taste like this and will fail. At home, you will perfectly replicate it but it wont taste the same for some reason you cant comprehend. At some point 30-50 years later depending on your current age, you will tell your wife/kids/grandkids about the time you visited the balkans and ate "the best fking food of my life" and how "im still trying to find a place that makes it as good."

Acidic tomatoes with lots of juices , complimentary fresh cucumber cut not too small not too big , either the white part of green onion or white onion with the perfect balance of sweetness , salt . This is the perfect salad for me , perfect and simple . No oil , no nothing .

I don't remember the place (but might have been a franchise?) in Belgrade -- it was just burgers from what I remember. Huge patties folded over on the lepinje bread; condiments were nothing like north American style -- grilled peppers, onions, garlic, red pepper cream cheese, aubergine relish, Kajmak.
Not so much comfort food but absolutely glorious after a night of drinking and parties.
There was also a store that only sold gibanica (similar to burek but not round, instead cut into squares) -- the mushroom gibanica was my crack for the two days I visited.

Yeah those childhood homemade fries tasted better then any fries I had since then. As kid I could eat unlimited amount. Why you have bread with fries though? Reminds me of my parents that ate spagheti or macaroni with slice of bread on the side. lol. Eating carbs with carbs. I hated salad as kid because my mother would drown it in vinegar, oil, and salt. Most of the times it was just tomatoes and cucumbers anyway.
