Budget ebike for town and trails?

There’s some sweet trails that connect from my place to my parents place and I want an ebike to rip em (it’s allowed).
I am leaning toward an old school mini moto type style but wondering if I should be getting a mountain bike one.

I am going to get downvoted all to hell on this comment here (you’ll notice anything not traditionally shaped like a bicycle or from non traditional bike manufacturers in the r/ebike sub will immediately “catch on fire” and “kill you and everyone you love”) but…
after months and months of researching and reaching out to the company for some quick back and forth emails and phone calls with questions (all of which were replied to within a day and calls to the California location were immediately answered) I purchased the tst r002 (799.00 1 year warranty)
I’m am in my late 40’s and have been on bicycles my whole life, first ebike and I purchased it for the price, looks, features (front and rear suspension, parts acquisition and about 5 billion you tube reviews of people doing throttle only “demos” 😂) but it has a basic Shimano setup and I don’t mind turning wrenches. Hub/hub motors seem to be in the $200 range for a replacement, brakes are on the cheaper side but easy to get stuff for and work on. I live in Colorado and the downhills are goddamn treacherous.
I’m 6’6 and it feels like hopping on a BMX when I was a kid.
For food delivery stuff it’s amazing. Basically an underpowered (on the road) electric moped. Zippy to top speed. Stable under my big goofy ass (Can) pass traffic/keep up with traffic for the most part. (Bike lanes when available, and when I’m not delivering, I’m not riding it anywhere near top speed. It’s a very comfortable (but small) fun little bike. Its torquey motor eats the up hills no problem. 20x4” tires, so far (a little over 400 miles of daily use) seem really decent on everything. (Haven’t tried them on snow yet but I will). Battery from a full charge will get me through the day. Haven’t drained it dead yet.
I’m super happy. My neighbors and a few restaurant people have asked for the website because they want one. My wife now wants the r7 (step thru) one. Very fun, so far reliable.

R002 and R7 are great bikes. Also you would've saved $200+ if you ordered it on the tiktok shop instead.

If it goes over 28mph, it's legally not an ebike.
