I’ll give you the benefit of the doubt and assume this is a genuine question. You shouldn’t overlay travel more and spend more time in other cities to get to know their personality.
For just a few:
NYC - loud, in-your-face-extroverted, embracing varied cultures and their foods
Denver - Nice, laid back, nature and fitness focused.
Portland - Super casual, also nature focused, embrace anyone that isn’t a dick. We took Austin’s weird and turned it up to 11.
I’m sure other people could chime in with plenty more. Cities are supposed to be about people coming together and what connects them beyond “We are just here to work and make money.”

I'm not gonna downvote you because I get what you are saying, but using NYC as an example of a city who's personality isn't money is just being willfully obtuse. That is the worst example you could have possibly used.
On a more anthropological note, cities always formulate where trade occurs. Centralized nodes where money and goods are exchanged are what cities are. Most older cities are focused around ports where goods were exchanged for money. So cities attractiveness is that there is money there. Dallas is no exception to this rule, it grew because it was a centralized node for commerce. New Orleans, Ohama, kansas city, miami, portland, seattle, london, paris. All these cities became big because they were the areas where money is and can be made. Cities aren't created and grow because people want to expand "culture". The culture is a side-effect that happens after the fact.

NYC is clearly a city whose personality was money. London and Paris were the same way, but 2000 years passed and a bunch of culture came out of that. You are also ignoring the fact that Dallas has been a huge cultural icon in the world, with football. You probably just don't like the culture it has created. Give it some time and something you like will probably come out of it. Let me know in 2000 years.

Believe it or not, when I lived there I was surprised to find I wasn’t the only person to come to this conclusion on his own. And interestingly, folks like you who get annoyed to hear it can’t seem to articulate what on earth Dallas’s personality is—if it isn’t just money.

Oh, I know. Hence my edit. Texans are raised to believe Texas is some kind of flawless utopia and they take it on faith—don’t question it. It shakes their fragile world to hear when someone else hasn’t bought into their fairytale.
Shortly after I moved there someone asked me, “Well aren’t you excited you’re in Texas now?” Somewhat confused I replied, “Sure, I guess. What makes it so great to be in Texas?” And they answered, “Because it’s Texas!!”

Dallas is hosting the most games of any site. Naturally our visitor amount will be higher and increases demands for lodging for both short term rentals and hotels.
Also it’s widely known Dallas and many of its neighborhoods are anti short term rentals. While it’s tied up in court at the moment, there’s a considerable volume of short term rentals properties not listed on AirBnB or Vrbo from owners who want to possibly avoid having to pay back hospitality taxes if/when anti short term rental laws are passed.
