Which build should i choose?

Hey guys, i really need your help!
Im trying to buy a new pc (my current one is kinda old) so i searched a lot in the past few weeks and came to 3 options.
Build 1 (1599 euros)

I'm really hesitant about the price, but there are other things to consider. The first two builds are pre-assembled from a reputable store and have a 3-year warranty. Build 3 is purchased with individual parts, each with its own warranty (I chose the parts myself). For this reason, I can't exchange any components from the first two builds.
I think the real problem is that the second build has a much better GPU but a very weak SSD and power supply, while the first build has very good components overall but a worse GPU. The third build is obviously the best, but the price is quite high, while the first build has a €200 discount (related to buying all the parts separately) and the second build a €100 discount (same thing has the 1st one). I'm really undecided on what to do. Should I spend more now and not have to worry about it in the future, or should I buy one of the pre-built systems, knowing that if I change any parts I'll lose the warranty? I appreciate any help you can offer. Btw, the first 2 builds end the discount on monday.
PS: Don't recommend new components, because I'm from Portugal and the prices are different from other countries. Thank you!

3rd one with modifying the build to a b650 motherboard and a gen3 ssd if theyre cheaper. With prebuilts you are always spending 200€ on building and windows (so in reality 100€ less when building on your own as per rule 3 because no one would ever buy windows from a shady seller)

In this case the prebuilds are cheaper then buying all the components in the cheapest places. I did the research so the prebuilds are in a good price. Thats why its so hard to choose xD. The price in the post are the final price!

Well you could always just look for any good deals on the used market when it comes to gpus. Otherwise since the dl is Monday I’d now actually recommend the first one

Sure thats an option too! The first one? even tho has a weak power supply and weak ssd? im afraid its going to compromise the performance and the overall pc.

Well if its a prebuilt I am sure they've tested that it actually works with that PSU, and when it comes to gaming you could have a SATA SSD (12-14x slower than that) you wouldnt notice a thing.

I've got experience with that and its all fine. All of my games are on there and 0 problems.
