I hate to tell you that the ice cream scooper is actually not rated for ice cream and is actually a disher for portioning out sides like mashed potatoes, Mac n cheese, ect. Either way, not great for browning ground beef.

I'm in the UK, I always drain the fat. Using lean mince can result in very fine mince, most of my customers prefer a chunkier texture. I like 80/20 meat/fat ratio for optimal texture and flavour.

You don’t want it too lean or else it won’t have a ton of flavor. I usually buy 85% lean and don’t drain all of the fat, but the majority of it. Fat is flavor, after all. I’ve used 90% for meatloaf and it wasn’t all that great.
It’s also glue. Years and years ago, we were having a small gathering for the 4th of July and a friend that worked at a grocery meat counter came. His boss had made him mad that day, so in an act of revenge, he ran some lean sirloin through the grinder and made burger patties out of it. They fell apart and fell right through the grill and onto the coals because they didn’t have any fat to stick them together. If they had stayed together, they would have been super dry.

So I usually buy 5 lbs of 80% and package it all up into 1/2lb blocks and freeze it. I like to use it for burgers, but if I want it for say spaghetti sauce or something else like that, I'll drain the excess fat. You buy the higher fat content for the things you want to have the higher fat content for and drain when you make other things. If I just buy the lean 90% the burgers won't taste as good.
