Cottage pie probably, always a great way to use up pretty much whatever meat or veg I have when chopped up, and always have half a dozen or so in the freezer (I live alone and tend to cook as if for 4 or 5 and put all but one of them in the freezer).

The one I make is German style. Stewing beef browned off and then onions cooked out in the fat you cooked the beef in. Couple of spoons of paprika, beef stock, carraway seeds and of course diced peppers. Probably not a patch on your Nan’s though!

‘mediterranean’ vegetables roasted with olive oil and balsamic vinegar, in arrabiata sauce with penne or rice.

I think so. Takes about 30 minutes start to finish. Saute bacon and onions in butter for 3 minutes, add and saute chopped mushrooms and garlic for further minute, add risotto rice and cook for a minute stirring continously. Add white wine and reduce down in a few minutes. Add 3/4 of the stock, stir, cover and put it on a VERY low heat. Check it after 20 mins and only add extra stock if it seems dry, before adding parmesan cheese. I don't sit over it, dripping tiny amounts of stock every 5 mins like they say. Maybe mine isn't 100% autentico, but I think it tastes nice.

Pasta bolognese! It’s easy and I can make a massive batch because all 5 of my kids eat it, even my kid who has ARFID (as long as I also make bechamel sauce to mix in so it’s less tomatoey), my friend whose kid and husband are fussy takes a portion so that she gets something tomato based without cooking just for herself, my parents love it so I can send them a portion to have on a jacket potato, and it’s my little one’s favourite. Oh! And I put whole baby mushrooms into it so they’re easy for my aforementioned problem food kid to remove, but whole baby mushrooms are my absolute favourite also.

Oh don’t worry, they eat very well. Chilli, stew, bolognaise, cottage pie, roast, curry etc. They prefer home cooked food to ready meals or processed stuff generally. They just really love plain pasta because, well they’re kids.

6/7/8 egg Spanish tortilla with lots of onions, layered potatoes and peas. Sit it on the hob for 10 minutes to set, sprinkle cheese then into the oven for another 10. Eat hot, eat cold, take to work. Can add curry powders and garlic to go that way or dried herbs and tom purée to go that way

Chilli, just because its easy, freezes really well and i actually love it. Plus its actually not that expensive to make.
Chicken and chorizo paella. Will keep in the freezer for a month. Takes longer to make and needs more prep, but the results are worth it. Used to make it weekly. Now i make it every other week, double portion. Eat one and freeze the other.

Easy to make - always have the ingredients in stock except for the meat, so it's a quick shopping trip to pick those up.
Doesn't take a lot of time to cook - start to serve in about 30 minutes.
Filling - Only two of us, and usually makes enough for lunch the next day as well.

Bangers beans and mash. Used to have it every Saturday as a child when my Grandad would come over and bring a bag of proper sausages from the butcher. I'd make a "mash mountain" with a hollow core and pour the beans in the middle and let the bean sauce flow out like a volcano.

Do it very traditionally, slow cooked for about 4 hours. Find the process very therapeutic also.
I love the taste, nutritionally I think it’s fantastic. Ok there’s a bit a of fat in there but that’s fine. Most importantly it’s something you can save in the fridge and it gets better. And you can freeze it.

Mince n tatties.
It fills the stomach and the soul.
It’s easy to make but made with patience so everyone’s tastes different.
Put Ground mince beef in a pan to brown
Add 1 large brown onion, chopped
Add 2 med-large carrots , chopped. Cook on low with lid on for 10/15 mins.
Add water so ingredients are almost submerged.
Simmer for 2 hours. Add gravy salt to taste or until medium brown.
Add cornflour to thicken.
Cook for two hours on low.
Put in fridge.
Serve next day with mashed tatties, broccoli, peas and doughballs.

I love this. My wife is vegeterian and there's no real alternative (she has no issue with me eating meat, but it's easier to eat the same meals - I eat a steak every now and then to curb my carnivore cravings.

Try to get 10-15% fat mince, it works best in my opinion. 5 is too dry and 20+ is too fatty and rubbery.
When you make the tatties don’t cut them up too small to boil, they get watery that way. A normal tattie can be cut into quarters. Try to stick to a roughly similar size for all bits.
Make sure you add a large pinch of salt to the water before the tatties. It never works as well if you add it after.
Those are the two important steps if you ask me. That and eating it the day AFTER.

4 chicken dippers per burger 2 slices American burger cheese Seeded bun cut in half.
Bung dippers in air fryer for 20 minutes on 180, turn half way through.
1 Cheese on bottom bun, dippers on carefully. squirt some sauce of choice. other cheese on top of chicken, top of bun on.
If you can be arsed, add some shredded lettuce and a slice of tomato.
It's unhealthy, but it's quick and easy, very tasty and pretty filling.

I disagree with this, I'll freeze most foods, I'll only ever cook as much pasta as needed. When pasta gets defrosted there's too much water and the pasta goes really soft and mushy. Pasta can be cooked really quickly and is always better fresh

Mushrooms, sausages, eggs on homemade bread. Probably 350 days a year as it’s my husband’s preferred breakfast. That’s the basics, probably 150 days a year he’ll have liver with it. On other occasions he’ll have black pudding or tomatoes or potatoes or bacon with it as well, depends what’s in the fridge or left over. I don’t eat breakfast.

Fry the chicken breast pieces, put it to one side. Fry ginger, chilli and spring onions. Add the fried chicken back. Then basil and toasted cashews. Put it all on some rice and pour on some Lingham’s sweet chili (nothing else will do). 100%, gold-plated, copper bottomed delicious meal. Never tire of it.

I haven't but I do think that would work well. Because this is a japanese recipe the miniscule quantity of doubanjiang doesn't lend any spiciness whatsoever and I think gochujang and doubanjiang are similar levels of spicy. I often dump a load of gochugaru on top at the end.

"Whats in the fridge" + Pasta: Bit of bacon? Or is it chorizo? Half a red pepper? A courgette? Maybe a handful of frozen peas? My quick version of coq au vin blanc.
Note: everything is cooked in a cast iron casserole.
Fry up some bacon lardons until crispy. Remove from the casserole.
Using the bacon fat, brown off both sides of 4 whole chicken legs (thigh and drumstick). Remove from the casserole.
In the fat/juices gently fry a chopped onion and a clove of garlic until the onion goes translucent. Use the vegetables to deglaze the pan.
Remove the casserole from the stove.
Arrange the 4 chicken legs on the onions.
Sprinkle the bacon bits over the chicken.
Add chopped carrots and whole button mushrooms, filling in all the gaps you can.
Sprinkle everything with a couple of tablespoons of Bisto chicken gravy granules.
Pour in an entire bottle of a good quality Riesling. If you need more liquid to just cover the chicken, add water.
Put the lid on the casserole and put it in the oven for 4 hours at 120°C.
Serve with either rice or mashed potatoes made according to Leith's Cookery Bible (Google it).

Chilli con carne and cornbread on the side. Easy to make, comforting and enough dinner to last me Monday to Friday. I also sometimes take it to work for lunch.
For dessert, I regularly make an Indian yogurt dish called shrikhand. It's tasty, fairly healthy and easy to prep. The longest bit is basically straining natural yogurt in a muslin cloth (I use Vanilla flavour Onken) overnight. It leaves something quite similar to Greek yogurt in consistency to which you add a bit of icing sugar, saffron, ground cardomom and chopped nuts.

I eat a combination of this most week nights-
Marinated chicken thighs fillets (cheaper and tastier than breast in my opinion), I rotate flavours like peri peri, tandoori, Korean bbq, buffalo. Stick in air fryer for about 7 mins each side, I use a food temp so I don’t over cooked them.
For a side I’ll have either have sticky rice, flatbread, pasta, pitta, potato salad or fries.
For veg side I’ll either make a Caesar or Greek salad, slaw, tenderstem broccoli or corn on the cob.
I like to made homemade sauces/dips like raita, aioli, guacamole or salsa.
Endless combinations! I usually stick to a weekly theme like Indian flavours one week, Mediterranean the next so I’m not buying loads of different ingredients that are going to be wasted.

My most common foods are:
Tacos, usually chicken, occasionally pork, current chorizo and chicken. At least once a week.
Then chicken wings, bung 2kg of wings in oven with 3 or 4 different spice mixes. Usually once a week.
Tuna Pasta bake would be next as a lazy meal, kids will eat it too.

Probably spaghetti Bolognese, it's at least every two or three weeks in the standard rotation. It's easy, reliable, and feeds an army.

It might sound very weird to the British ear, but it's traditional and critical in the original Italian sauce before we bastardised it.
I lived with Italians as a student, and my cooking game was radically improved in months, and it's generally just tweaks like this.
