Is no AC common in expensive hotels around the UK?

I’m traveling outside of London for the first time. In London I know AC is a hotly debated topic, but once you are spending enough on an apartment, hotel, or restaurant, they usually have AC. We are in Cornwall this weekend and staying at a “luxury” property. Costs about $500 USD a night and they don’t have AC. We opted for the deluxe room, which in my world view should be a better room. This is probably the first time in my entire life that I have paid an exorbitant a mount for a hotel, and yet there is no AC? Isn’t that like the most basic amenity? i know it’s my fault for not checking. But, who checks for AC , when paying this much. We paid $470 for 2, for a return GWR train ticket and $500 a night for this room. At this cost, I wonder if it would have been better to fly out of the UK and experience real luxury.
