The problem is you frying it, or eating it in a 50-50 mix of potatoes and butter. Go light on the butter (or skip it entirely) and you'll have a great tool to lose weight.
It's always crazy to me that people mention eating filling food is a way to lose weight like you're a child who throws a tantrum when you are hungry? Your belly needs to be full and you also need to lose weight?
Do you think you need a full stomach multiple times a day to survive? Have you tried just eating less amounts of the foods you enjoy and suffering a couple days of headaches while your body adjusts?
Well if you make a meal that is healthy with lots of potatoes, it will help you lose weight because then there's no reason to want to eat more. Helps with portion size mostly.

The best method to losing weight is to eat what you enjoy, but keep track of the amount you eat. The best diets don't restrict the things you can eat, just how much. As long as you stay at a caloric deficit, you can eat chocolate and hot dogs everyday.

If you have zero self control, then sure, don't keep anything tasty in your house. But my point was generally related to things like spices. Don't eat bland boring food. Use spices, and make delicious meals.
How is white rice > Potatoes? No fucking way white rice has a superior nutrient profile than potatoes. Maybe whole grain rice comes out on top but even then it has to be close. Btw. obviously talking about unpeeled potatoes as the picture above shows.
Brown rice is optimal in theory, but it retains more arsenic. For the average person you are correct but I go to the gym a lot and with the quantities white rice is superior.
Unpeeled potatoes are very close anyhow, depends what you need them for, they're actually better if you're trying to lose weight probably. But white rice is much better to gain weight / muscle mass (more calorie dense and less filling for the same calorie count).
Also worth noting that white rice are ideally eaten cold after being put in the fridge for a while, as it becomes another form of starch, which leads to less insulin spikes and blood sugar levels. Although it might reduce calorie count, but I don't think it does.
I’ve heard that chilling white rice helps with insulin spikes, but when it’s cold it’s hard and nasty tasting. Can you heat it back up, or does it defeat the purpose of chilling it? Not sure if the chilling alters it permanently or it’s because it’s cold and hard that the body doesn’t have the insulin spike.

Many of our ancestors did not have access to many of the foods we have today and they were fine. Food diversity almost never hurts for sure, but if you have a good diet that's always the same thing (like I do for instance) but is well thought-out then it's not really an issue. The biggest risk is probably sheer boredom I suppose. Personally I prefer it that way because I don't enjoy cooking, I want efficiency and simplicity, and if I want a good meal then I go to the restaurant with friends.
I guess we mostly agree with each other, but to split hairs: You probably can survive on eating the same stuff every day and live a long life without encountering major health issues, as long as you cover most of the basic nutrients with your meals, but it is definitely suboptimal compared to having variety in your diet. The body needs different essential amino acids, which he can't produce from scratch and which afaik can't be covered from one source of protein. And i understand it is a lot more work this way, which might not always be possible if you live a busy life but I would encourage you to mix it up every once in a while. Try some lentils or soy as a protein base maybe :)
