The picture actually looks nice, bummer that the flavor was not. It would have been better if you’d cooked and seasoned the shrimp and tomato first, then added them to the center of the omelette when the omelette was done

I have a bizarre digestive disorder, called a Sucrase deficiency. I can’t digest very many seasonings so I am limited. Someone did suggest feta and I think that sounds good.

I dont know the specifics of your condition but im currently reading about it because i had never heard of it, and there doesnt seem to have many guidelines for cutting back on seasonings specifically. Is your condition CSID or is it some kind of variation? Do you know where i could find more info about the dietary restrictions of your disorder?

Yes. It’s CSID. My body can’t break down sugars that are made of two molecules. Usually glucose and fructose. I can eat high fructose corn syrup and dextrose, a single molecule sugar. I can’t tolerate onions of any kind. Paprika is another I can’t do. There is a digestive enzyme that helps some people called Sucraid. They usually have a good list and information on their website. Everyone who had it tolerate things differently. It’s very hard for those of us who have it to even be sure of what and/or how much we can tolerate of certain foods.

I got mildy downvoted for asking but im genuinely curious about your condition, I want to know which limitations of your diet prohibited you from seasoning and i'm finding little info about it. found this on the sucraid site which says little about what i was looking for, except for ruling out onion powder. On this other site it says "Spices and herbs can be enjoyed freely"
Of course, I'm not telling you what you can or cannot eat because you know your body best, but if you could link any resource that coincides with what you say I'd love to read it.

Try going to the group on this page. There are a multitude of lists out there and none of them work for all of us. If a plant has enough sugar in it to bother someone, making it into a spice won’t necessarily change that. Not for me anyway. There are some seasonings, like garlic, that I can have a tiny bit of but fresh garlic is a no. I can’t link you to any list that works for all of us. Here is a site link. I can’t eat almost anything that they have listed for fruit besides the citrus and berries. However, this site mentions the seasonings being low in sucrose. I used to eat seasoning freely and learned it the hard way, especially with paprika.

Not OP but I have a hiatal hernia. I still eat them but should not be eating; pepper, excessive salt, paprika, chilli, garlic, onion powders, curry powder, or any kind of spice.
Those are all seasonings. It is not only mild herbs.

A hiatal hernia is where part of their digestive track is sharing space with their lungs and heart. Anything that could cause bloating would thus restrict their ability to breathe and put pressure on their heart. A simple internet search and common sense would have told you everything you needed to know.

No. I can’t digest anything with disaccharide sugars (sugar made of two molecules) and also most starches. My body can’t break them down if they are fresh plants or dried herbs.

Sucrase Deficiency. CSID Congenital Sucrase-Isomaltase Deficiency. They have a group here. No one can digest sugar normally but everyone who has it has different tolerances to various foods or quantities of foods that is unique to them. I can eat a few grams of sugar a day and a few starches. Other people can’t. There is a digestive enzyme called Sucraid. Their company website has the best information.

That is EXACTLY what happened. I dried the shrimp before I cooked them but they were wet after I cooked them. I should have taken the seeds out of the tomatoes. It probably would have been all watery anyway.

Chopped up a bit more aggressively and fried to reduce moisture is the secret to making things work in an omelette. You can just use the same pan, cook the stuff a bit until it sweats out, mix it into the egg mix, then pour it back into the same hot pan. Super easy. Pair with some bread and you have a banger meal for no effort. You know the filling is ready when the full pan of random bullshit magically shrinks to a fraction of the size. If it looks like way too many veggies, mushroom, etc. it's probably the right amount.

Cut the seed pulp out of the tomatoes, then give them a quick toss in the pan BEFORE adding the egg mix so you can cook off some of the moisture.

Something that might help is to pan fry the meat and veggies before adding them to the egg. They get a bit of sear, and lose water before adding them to the eggs.

The tomatoes and shrimp made everything watery. That made the eggs, not cooked right. Several people have commented by spices were limited. I have a digestive issue and I can’t have many spices so it was all just too disgusting.

De-seed the tomatoes, and dice them small. (Like pico de gallo small.) Then add them at the last moment before you close the omelet, when the egg is cooked most of the way through.

-Then stir fry your eggs to a soft scramble
-Then cook your tomatoes until he moisture reduces down to almost a chunky sauce. Then add your eggs back in along with any extra protein.

Take it out the pan, tomato in and cook out the water, then add in the beaten egg whites, cook one side, add the prawn, flip and warm through. Would season the egg white mixture and after flipping. Its a combo that absolutely works
