I came across the Orbea Carpe (https://www.orbea.com/en-pt/m/carpe#1940), which has a folding stem (the handlebar rotates 90° to sit in line with the bike for compact storage). I can't buy the Carpe for other reasons, but I want to replicate this on whichever bike I end up with. Before I commit to a bike, I want to make sure it'll support a modification to allow a similar feature.

I assume that integrated displays in the stem would make it very complicated. Is this the only real concern, or am I missing something? Does internal cables through the stem prevent the mod, or is it workable?
What's the correct search term for this type of part/mod?
