Folding or quick releaser stem on a non-folding urban ebike

I came across the Orbea Carpe (https://www.orbea.com/en-pt/m/carpe#1940), which has a folding stem (the handlebar rotates 90° to sit in line with the bike for compact storage). I can't buy the Carpe for other reasons, but I want to replicate this on whichever bike I end up with. Before I commit to a bike, I want to make sure it'll support a modification to allow a similar feature.
I assume that integrated displays in the stem would make it very complicated. Is this the only real concern, or am I missing something?
Does internal cables through the stem prevent the mod, or is it workable?
What's the correct search term for this type of part/mod?

Thinstem looks like a nice product.
Get something that has a "conventional" stem. Two bolts that clamp onto a post. No cables coming through the stem. No display in the stem. Nothing fancy.

If the cables are in a fixed position being routed from the frame thru the stem them it might not work. In the case of this bike it sounds like the cables turn with the stem.
Really cool bike though.
