one 32gb (2x16) kit or two separate 1x16 gb

hello! im gonna build my first pc soon (probably after summer) and I've been looking a lot at ram prices, now i do know that buying 2 separate sticks might cause some issues, but is the chance of having problems lower if i order them at the same time? is it still a problem if im probably NOT gonna overclock/undervolt?
On Amazon (italy) the Kingston fury beast 16gb is at €261\~ for 2 separate 16gb sticks but €500 for the 2x16gb kit. Is the small(?) risk worth saving €237? should i wait and hope the prices lower by later this year? should i save more (which might be kinda hard) and spend those extra money?

they're all under the same link/item, check the color, the white one is at 278 for me, the black one is at 117(+13 shipping)

If you are getting two identical sticks, it should be ok. However check the performance details for the two sticks, at that high of a price difference, the lower cost sticks are likely much slower. You really need to see what the speeds are, and it also depends on your CPU. If you are planning to use an AMD X3D CPU for example, then high speed memory has less of an impact. But if you are using an Intel CPU, you can take advantage of very high speed memory more than with an AMD CPU.
So, technically anything faster than DDR5-4000MTS is overclocking, and to get those speeds you have to enable them in your system BIOS. If you don't care about overclocking, anything faster than DDR5-4000MTS is unnecessary. Also, if you are talking about DDR4, then the base speed is DDR4-1600MTS, anything faster than that is technically overclocking and you have to enable the speeds in your system BIOS.
As long as you are getting two identical pieces of memory, you should be ok. They don't have to be part of a kit.

It doesn’t work like that. The supported speed depends on the CPU and motherboard and RAM. The highest is DDR5-7200 when using an Intel Core Ultra 200 “Plus” CPU with CUDIMMs on a 1-DIMM-per-channel board. The lowest is actually DDR5-3600, for example when using 4 sticks on AM5. Even DDR5-4000 would be overclocking in that scenario.
DDR4 goes up to 3200 without overclocking.

Honestly €500 for a normal 2x16 Kingston kit sounds completely broken pricing wise lol. id double check capacity/speed because thats nowhere near normal.
2 separate sticks usually work fine if theyre the exact same model/specs, especially if youre not manually tuning RAM. but a matched kit is still safer because theyre tested together. honestly id probably wait a bit instead of paying those prices.
