Why is your bacon so good?

I’m from Ireland. We share the same bacon style as uk. I tried American style recently and WOW! Why have I never tried this before. Wayyyyy better! Are you proud of your bacon? Does it even originate from America? I love bacon.

We have multiple kinds of bacon in UK. Streaky bacon is like American bacon and rashers is somewhat similar but not really the same as Canadian bacon.

Can you explain that in universal terms. American pigs and UK pigs don't have different muscles. In the US, cured pork belly is what we call "bacon". Cured pork loin is called Canadian bacon. Cured shoulder shoulder is cottage bacon, which is less common. What muscle is rashers from?

A British pub near me (American) sometimes has a pork gammon on the menu, lightly smoked and served pork chop style with sautéed cabbage and apples, and it is absolutely heavenly.

In UK, if you go to the butchers, you can ask for back, streaky or middle cuts, smoked or unsmoked. Back is loin plus a small bit of belly (not the full section), rather similar cut to Canadian. Middle is loin (back) plus the full streaky section. Streaky is just belly like in the US. I'm sure you can be more specific if you want another different cut but those are the standards I've always bought by since the eighties.

It’s not the same. We have streaky bacon in Australia and it’s not the same as in America. (American, live in Aus). The fat doesn’t render quite as well and it doesn’t have a much flavor.

A lot of European bacon seems like that. Looks like generally the same sort of product, but the cure is different and is either very lightly smoked with different woods or not smoked, and it's not cooked to crispness. The Europeans don't seem to understand American bacon culture at all, and it's to their detriment. Not to take away from European cured pork culture (I mean, proscuitto and the Iberian hams, salamis etc.) but they need remedial bacon training.

The smoke flavor is real but doesn't get applied as evenly and the process doesn't dry the exterior, which affects how it cooks. The smoke flavor is a product called liquid smoke, which is really just smoked water, they put an uncovered pan of water in a smoker and let it soak up the smoke instead of putting meats in the smoker. Liquid smoke lasts longer so they can buy it from a factory, ship it to where they need, and then apply it and it saves a lot of time in the process so it makes sense in some contexts. You can also buy bottles of the stuff or make it yourself if you have a smoker in case you want to add some smoke flavor to something and don't have time to actually smoke it. It won't have all the preservative effects of proper smoking, but most people aren't smoking for food preservation any more.

I enjoy ir when I am over there. I usually rent a holiday house and cook at home.most days. So I shop the grocery stores. It is tasty in its own way, but the flavor really is in the fat. A BLT hits differently. Although the bread and tomato is better the "b" part just hits different.

Ah, this makes perfect sense. I was trying to figure out how the same cut of meat would have a distinct difference in taste. In my head, it couldn't reasonably be explained by differences in amount of salt, farming practices or any sort of differences in regulations. Also, TIL about this difference and I feel pity for them, though I'm sure their cut is relatively leaner/healthier. But let's be real. You aren't eating bacon for it being a healthy option.

I'm mostly from around the southeast US and we use the term "grill out" a lot. The emphasis is lightly on the 2nd word, so I would say "do you want to grill OUT some burgers tonight" in the same way you'd say "do you want to eat out tonight". Cook out has the emphasis mostly on the first word, like "Do you want to have a COOK out with the neighbors tomorrow". I don't think I've ever heard "Do you want to have a grill out".

Yes but if you go to most southern cousine restaurants like Cracker Barrel l. The cornbread is unsweetened. The south makes up for the lack of sugar in cornbread by putting lots of it in their iced tea.

Yeah. It's just the smoke. Well, that and the location on the pig. US bacon comes from the belly. English bacon comes from the back. We can actually buy something pretty similar to English bacon, but we call it Canadian bacon.
For the record, OP, my oldest kid actually prefers UK/Irish bacon to ours. He doesn't like the smokiness and richness of American bacon.
Also, sorry for repeatedly saying "English bacon." My only experience with it is in England and Scotland and I've never been to Ireland, so I can't speak first hand for Irish bacon even though you said it's similar.

Cherry wood is honestly the best default wood for smoking. I've experimented with many woods with varying results on different meats, but cherry always seems to be the best choice. Sometimes I will mix in some maple or pecan with the cherry, but cherry is always the best choice for most meats.

My experience is that everywhere in the Commonwealth (former), bacon or rashers refers to cured pork loin that might have a bit of belly in it. American bacon is straight pork belly and is usually sold as “streaky bacon” in the Commonwealth. Ours is usually smoked not just cured. The extra fat and smoke give it the flavor.
It’s not hard to make your own.

Whenever I google Canadian bacon, I've never seen that version in a store anymore. We do have maybe a more fancy version called Peameal Bacon which I believe is just a thicker version of whatever you guys sell, but it's very different.
Peameal Bacon is closer to a thinner, fattier pork chop than bacon in my opinion. Good, but barely feels like bacon lol.
This is also very rare. Most restaurants don't even have it and the few that do, you need to request it specifically. No one really cooks it at home either. The people who love it probably will, but regular bacon is the preferred version by most.

While bacon itself isn't originally American the way we make it is. American Bacon uses pork belly instead of the leaner cuts that most countries use. It's a little less healthy, but absolutely delicious.

The main difference is that it's a completely different part of the pig -- belly (American) vs loin (UK). Belly is like 50/50 fat/protein, whereas loin is much, much leaner.
Also, American tends to be cut extremely thin, while UK is noticeable thicker.
So you end up with what's so great about American bacon: it's just enough meat/structure to hold a bunch of fat that completely fries itself. It ends up much more something you just want as a garnish, whereas UK is a nice meaty bite that feels more like a main. American gives you that crispy stick of rendered fat that just explodes in your mouth.
Oh, and the smoke, too. That's key to the flavor as well.

For some reason UK bacon is more similar to ham in flavor and texture but is still called bacon. I didn't realize Ireland uses the same cut of meat. American bacon is pork belly and is typically smoked or cured before being sold which also adds to the flavor profile. It cooks up crispy because of the fat content and it is nice and salty. If you've ever had chicharron or crispy chachu pork it's sort of similar to that.

Two things are different about American bacon: one, American bacon is always pork belly -- what you'd call streaky bacon over there. Two, it's usually smoked and not just salt cured: traditionally hickory or apple wood. That gives it a more complex flavor than you might be used to.

Once I ate some fancy bacon at the Las Vegas Wynn brunch buffet ; probably back in the early 2010’s. I’m sure it was hickory smoked, but since it had some sweetness to it I think it might have been maple glazed or something….but what made it extra fancy is they were slicing it for you off the belly chunk/cut of pork. My goodness, I’ve never had such be on before or after. Absolutely delightful. Nowadays I stay away from pork in general, but I would definitely have that specific back every so often if possible.

I’m from Boston, so I’ve obviously had irish bacon: the answer is that your bacon is basically porkbelly but not as good. Its way too thick and thus you have to char it to Even somewhat cook the center. Our bacon is much thinner and then on top of that its sweetened and smoked. So you have smoke+savory+sweet+salty+fatty which is all the things a brain wants in food except for a hit of acid.

I love bacon. In the US we have very unique styles of bacon. Some preferred extra crispy some soft crispy. Hickory smoked, applewood smoked. Thick, thin.
The biggest difference I noticed with the UK version of bacon is what in the US we would call ‘country ham’ or breakfast ham. It is a salt cured piece of ham slice thicker than bacon slices.
For example, we have a popular breakfast restaurant called Cracker Barrel that can be found when traveling across the states that is known for their breakfast menus of ham and eggs. It would be country ham slices with eggs or you can choose to have bacon which to us in the US are two different things.

Bacon is the top of the food chain. EVERYTHING is better with bacon in it. Therefore NOTHING is, by default, better than bacon. No one said this bacon is good but it needs X to make it better (adding hot honey or brown sugar is merely an improvement of those items, not the bacon).

American cured meat, at least where I live, was originally an export because pigs could be kept very cheaply here, much cheaper than they could be in Britain, because they could be driven into the swamps to fend for themselves, then rounded up when fat and slaughtered. The intensive agriculture and common law land rules in England made this impossible. Therefore, cheap pork was an early cash export. It was supposed to be able to keep in the bottom of a ship across the Atlantic in gigantic quantities to be eaten on ships or in Britain. The curing by salt and smoke was, accordingly, very extensive. After the locals started exporting tobacco and cotton instead, they kept eating it that way because they liked it. Meanwhile, it faded away on the opposite side of the Atlantic.
Or that's how I heard it explained why ham and bacon taste very different in the eastern US from elsewhere.

UK bacon is not terrible, but we would never call it bacon. It’s more like a small, thinly sliced ham steak. And that (and streaky bacon) is cooked until it’s hot.
American bacon is cooked until the fat renders and it’s crispy. There is debate on how crispy it should be, but you shouldn’t be able to eat it with a fork.

Yes, we love our bacon. And every time I am in Europe and they offer bacon at breakfast, I know I am going to be disappointed. Don’t get me wrong, the bacon offered across Europe is good. It’s just second tier compared to American bacon, due to the different cut of meat and the smoking of the meat.

Proud is an odd word to use, but as an American I do prefer American bacon to ones I have had in Europe. I now live in the Czech Republic and am always on a quest to find a bacon that suits me here. Czech "slanina" is closer to what Americans call "fat back". The bacon here that's closest to American bacon is coincidentally "Anglická slanina", which translates to "English bacon". Often it's too thinly sliced or too thick and clearly it's slightly different in other ways, including subtly in flavor. When Anglická slanina is cooked here, it's also underdone, to my taste. "Crispy bacon" is what most Americans aim for.
I can't speak for what's all available in Ireland or England, but in the US several different smoked options are available, as well as some sweeter types. The standard is a lightly smoked type.

You can see why it’s so popular here, and people can get creative with it. It’s good when you wrap a lot of other foods in bacon, too. Down here in Texas we have a store called HEB that sells jalapeño peppers stuffed with cream cheese and brisket, all wrapped in bacon. Throw those things on the grill over an open flame, and it’s perfection.

American bacon is fabulous, and versatile. The bacon grease itself is wonderful for cooking and flavoring other things. When I go on a bacon bender, I cook up a bunch of it and then fry eggs in the resulting grease. There's no better fried eggs than ones basically poached in a pan full of bacon fat. ❤️
Oh, and I use a couple lbs of bacon ends to make split pea soup. Fry up all the bacon chunks as the split peas are cooking down, and then dump the entire pan, bacon and grease, into the large pot I use. Takes split pea soup to a whole 'nother level. 😋

Hi, I'm a food nerd, and yes, our bacon is actually from the US.
While cured bacon of all kinds dates back likely to the English pre-1500s, De Soto's Spanish pigs coming to the US is where bacon likely first came to the US.
What we call Bacon or American bacon or streaky bacon is one of the forms of bacon that is historically called bacon and they didn't differentiate in a lot of the records we have, basically if it came off the side of a pig and got cured and sometimes smoked, it was bacon.
The American identity of bacon started in the 1840s and 1850s with the commercial sales of smoked, cured pork belly that were sold in slabs and cut then cooked as an alternative to salted pork. While this existed for decades, it really picked up support due to individually sliced pieces by Oscar Meyer in the 1920s and this style of bacon no longer had the protective cured and smoked outer layer, showing the quality of the meat in the packaging we still see much to this day.
To add to this and bacon and eggs becoming the breakfast food was due to advertising by a man named Edward Bernays with the Beech-Nut Packing Company, who also happened to sell bacon. Bernays is the grandfather of modern marketing and while bacon and eggs existed before, it wasn't until diner culture and the advertising from both Oscar Meyer and Beech Nut that it really fully hit the American cultural weight that we still see today.
Waffle House wouldn't exist the way it does today if Americans genuinely ate the way they did for breakfast in the 1800s before bacon and eggs became the norm.
Anyway, glad you enjoy our cold smoked and cured pork belly. It's good stuff. Make a BLT or turkey club with it. Totally worth it.

It's smoked pork belly specifically bred and cut to be "bacon" then cured.
In the American south you can get specific cuts which would be treated differently in the rest of the world. Most if not all are smoke/salt cured.
There's bacon which implies a smoke cured meaty product. Best cooked slowly, rendering the fat until crispy. Or floppy if you (wrongly) like it that way.
There's also fatback (basically pork fat with skin attached). Used in Southern cooking for flavoring and sometimes eaten as a snack.
Then there's country ham which is closer to a prosciutto type product, salt cured and hung to dry for months/years.

It's the same, we've always had it, often available smoked and cured just like in America. Except we'd never cure it with High Fructose Corn Syrup like some cheap American brands do. Please tell me you have had a chance to have fried rice w bacon in it? How about the multitude of other bacon based or amplified foods? Bacon in shrimp fajitas is great. Bacon jam. I honestly haven’t even had bacon since breakfast and am now considering air frying some just as a snack. (By the way, recently wrapped bacon around some hotdogs and air fried till it was crispy! My family loved it)

This is funny, because most Americans have never had “real” bacon. Traditional American bacon is heavily smoked and cured pork belly. You can keep it in your pantry, at room temperature, for months. It has a very smoky flavor. The stuff you get at the grocery store is minimally cured and usually has smoke flavor added (some of the premium brands do use real wood smoke, but it’s subtle). It has to be refrigerated.
Comparing the two is like comparing Dewars to Laphroaig. They’re both technically Scotch whisky, but one gives you a subtle hint of smokiness with a smooth finish, while the other makes you feel like a chimney sweep with a finish that is stronger than most prescription antibiotics.

If it’s the same as American bacon then It’s the cooking method. Most “bacon” I’ve had in the UK and Europe is just fried in a pan until it’s not raw any more but still soft and floppy and shriveled up. It needs to be crispy, almost burnt. It should also be thick cut for the best bacon.
If you want it even better, bake it in the oven.
You want a game changer, cook it low and slow in a smoker. 275f for about an hour.
