Should I go for 5060 8GB or 7600xt 16GB

I have been trying to make a decision on which gpu should I opt for , 5060 8GB or 7600XT. One is a new gen card with more AI features and more raw power but other just have more VRAM which just make me worried do i really need more raw power of it is chocked by less VRAM? I am mostly planning a 1080p build due to budget and i have my first priority as gaming. The difference in raw performance in about 23%. Which one is a better long term card which can actually run new titles and older too which more consistent frames. I do not need like 200fps on one game and 40 on other just above 90 fps on story games and around 200 for 240 hz monitor.
My go to games currently are RE9, RDR2, Sea of thieves, Valorant,The finals etc and more indie titles
Going for a ddr4 build with a Ryzen 5600.
And help and insight would help and try to give a name for card like you were buying it and with some explanation. Don't give me more choice like if I want ray tracing or that etc just a choice i can make

The 5060 is a superior GPU, and at 1080p you won't be worried about vram except in some very specific circumstances.
Is the 5070 way more expensive where you are? 12gb is ideal for you really, 8gb, while fine, may cause issues in some poorly optimized games, if you play those, even at 1080p.
There are plenty of people still using RX580 8GB GPU and playing 1080p all day long, any new game, the vram is almost never a problem (but not actually never).

The 5070 is actually out of the question due to budget problem and i just like to try out everything on the plate so I guess it shouldn't be much of an issue since my friends mainly rock 3060 12 GB cards so maybe i don't actually miss out ,would I?

Nah, at 1080p you'll be able to play any game with the 5060 for sure, and it WILL outperform the 9060XT (oh wait, you said 7600XT, I misread that, my first reply was considering the 9060XT, with the 7600XT it's not even a question, the 5060 is a far superior card).
If you do find a game where 8GB is an issue, just play with the settings, but this will be rare.

At 1080p I would just get the 5060.

Like wouldn't it be just a choke due to less VRAM like i mentioned or the 7600xt would not be able to attain that performance even with more VRAM

8GB VRAM is fine at 1080p, and the 5060 is ~20-25% faster. Also you get DLSS and better RT performance.
8GB is only an issue at 1080p if you're running max settings, max RT and FG. Which neither of those cards can do at comfortable framerates anyway.

Rx 9060xt 16gb would be your best choice. If you are on budget and cannot but 9060xt 16gb then it depends on you motherboard. If motherboard is pcle 3.0 then rx 9060xt 8gb if your motherboard is pcle 4.0 then rtx 5060.

The 16GB gpu. You can overlock the 7600XT for a few % more performance
