My go to recently (calorie counting and losing weight) has been calrose rice frozen veggies and beans, sometimes a meat but not usually. I put a little soy sauce, mirin, gochugaru, sesame oil, garlic powder, onion powder, bachan's dipping sauce, and kewpie mayo. It has been my main meal for weeks now haha it's super good and so easy.

Refried bean and brown rice burritoes are killer for this. Make it yourself, make tomato rice or salsa rice, mix and burrito. Add cheese if you can justify it.
Advice is to toss a can of salsa verde in when you blend the beans and over season them a bit, since the rice isn't going to have much going on outside of the lime-tomato flavor.
~300 cal, 14-16g protein, 12g fiber. All for around $1-1.5 each (without cheese).

My personal issue is the sodium. Every time I've gone into the doctor my blood pressure has been right on the line of very high and then they take it again and it's just below the line so they haven't said anything for some reason but I've just accepted that as me having high blood pressure. So I'm trying to reduce my sodium and make sure that I do a little more physical exercise so I don't have a stroke lol
That quick little meal that I posted about is like pretty low sodium, Even with the soy sauce it's only like two teaspoons

You can get reduced sodium salt (50/50 NACL and KCL, and you can often substitute salt for a little acidity if you have to watch the salt. Make the beans yourself and you control the sodium levels entirely.

Brown rice and black beans just have a wider nutrient profile than potatoes and onions. They're also both generally cheaper (assuming you buy both dry) nationally, but there are probably specific areas where this isn't the case. The big thing with brown rice and black beans is that they have complete protein, so you're getting all the important amino acids.

This reminds me of a story my mother told me. When she and my dad first got married, it was the middle of the Great Depression, and they and all their friends were just scraping by. They decided to go on a "picnic" with another young couple, but the only food they had was a bag of potatoes. And they had a bag of coal - not charcoal, just plain coal.
So they took the potatoes and an old iron skillet to a nearby park. They built a fire with a few twigs from fallen branches, and got the coal burning. Then they put the skillet on, with the cut-up potatoes.
The coal burned with an oily smoke and coated the potatoes with soot, but they ate them "and liked them" because there was nothing else to eat. So the poor people's meal was good enough.

I‘m from Germany, potatoes are serious business here.
There are too many potatoes in the oil in this picture. They can only maybe can get crispy like that, if you fry them forever, but then the onions would be black,because they were put in far too early.
2/10 homefry game, wouldn’t fly here.

Making good Bratkartoffeln is actually an art imho. Even most restaurants can’t get it right.
First you have to buy the right kind of potatoes. They have to stay firm when cooked. Then you Cook them but not too long, so they don’t become mush. Let them sit, best for one day, then slice them thin. Heat a pan, put a good amount of oil and butter in and then you put in the potatoes. It’s very important to not use too many potatoes, otherwise they won‘t get crispy. Let them sit until they become crisp on one side then flip them. Only when they become realy crispy, you remove most of the oil and put sliced onion and bacon in. Frie till bacon is crispy and onions are done, add salt and nutmeg and throw some fresh chopped parsley in the pan.
Thats how you do it.

Super duper easy, cover them with your favorite spices (for me it's salt, pepper, gochugaru, garlic powder, onion powder, cumin, and turmeric) and use a little oil in the pan and near the end you can crack a few eggs onto it and put the lid back on until the whites cook fully. Maybe sprinkle some grated cheese. It's a perfect hangover breakfast.

Also, rice is probably the most versatile. Try chopping and frying an onion and a carrot and mix it with boiled rice. Drown it in a sauce of your liking. Never failed me!

Flatbreads are great, cheap, and easy. Flour, salt, oil, and water, can knead them by hand, and you can cook them on a stovetop or hot plate without needing to use the oven.

Ya the farm fresh egg plug is usually worth the effort. We had an egg lady we were going to for a while but then we got lazy for a bit. Typically if there is a farmers market near you there will be people selling eggs and also giving out their info for off market egg purchases

This is really close to a fave dish of mine!
Boil a few taters. Once they're done, get them into small cubes or grate them for a finer texture. Sauté some chopped onions with salt, pepper and paprika, and once they're all done, mix them together with the potatoes and stir.
This is excellent as is, or a good base for more ingredients. Some fried sausages or bacon or other crunchy meats would go well for Protein, with cheese working wonder for flavor. Beans would likely work pretty well too. Sautéing some peppers as well likely works wonders, adding some green onion or herbs on top for presentation, adding in some rosemary or oregano or vegeta (vegetable mix, not the Anime dude) would enhance the flavor a lot. Some greens on the side (salad, tomatoes, cucumbers, radishes, carrots etc)
