Datacenters suck up a bunch of water, yeah? Well you know that actually does that sucking? Evaporative cooling. You know what instantly wrecks an evaporative cooler?
Cement.
Just saying, when we have to rise up against the machines, all you need to do is get cement into the cooling towers. Just fly your helicopter over and drop the full bags into the fans, or if you can get to them just take off the inlet louver and drop the cement in.
Cooling towers break, datacenter shuts down until the coolers and heat exchangera can get replaced

That's why you drop the full bag, goes down as a bag, breaks up on the fan which also breaks. Or you go in covertly without the helicopter
