Chicken liver parfait is also a thing, and usually on menus. It's a smooth rich buttery upgrade on pate.

It's a type of pâté, I think? Chicken liver mousse would be made with heavy cream, though, and chicken liver parfait with egg yolks. I don't know the content of what they were made of, but from the appearance and light, airy, spreadable consistency my guess would be mousse 😬
