The leftovers my GF freezes thinking they'll make a good lunch. I've been wondering what was in this for 6 months.

Waste not, want not. Seems like a reasonable thing to freeze and eat later. What's the problem? Too small of a portion? Add something to it. It sounds like she has a good idea that may need a bit of tweaking.

She doesn't cook, like at all. Shell never defrost and eat this, it's just taking to space in the freezer. The picture seriously didn't do it justice to how crappy a lunch this wire be.

It’s not so much the portion size, it’s that it’s frozen in a shitty way. Freezing rice is pretty frugal. But freezing it in a plastic container that isn’t meant to hold frozen food is the issue. Also, adding sauce later is probably better. And adding fresh vegetables too is probably better. Even adding frozen veggies and cooking it would make a good meal.
She had the right idea, she just didn’t execute it as well as she could have.

Man, people are really doenvote crusading against you, man. I actually agree with you, though. A wack of plain white rice ith three lil' chunks of broccoli and half a teaspoon of sauce is stupid as fuck.
I don't blame her for saving it, because I'm broke and cheap and I would too, but I'd eat it r repurpose it right away -- this shit ain't worth freezing when it's saving essentially no time unless you just want to eat a pile of plain, unseasoned white rice.

You got downvoted by someone, but I concur - though the portion looks a little bit small. I'd like having maybe 3 times that leftover, and then split the congee into 2 or so portions.
... On the other hand I am pretty big and has a voracious appetite, so maybe I am not the best person to talk about portion sizes with in the first place.
I generally have some frozen pre-chopped onion, and some bags of frozen vegetables. Fry the onion up with some freshly crushed garlic, slices of ginger, maybe whatever frozen vegetables for a bit, add in a broth of choice and yeah, that'll definitely work. Maybe a dash of soy sauce, black vinegar, etc too. Get some sliced beef or whatever if you are fancy, or maybe even century eggs if you are adventurous and experienced (Or just normal eggs). Should be a nice amber-coloured congee.
