It doesn’t look like anything special, just one of the X hour NATO E-3A component patches.
Looks to be gold, which I think all patches over 1000 hours are. It was pretty common for to Germans in the flight deck to have over 1000 hours.

The consoles and keyboards you see are going away. NATO is getting what's called the Final Lifetime Extension Program (FLEP). This equipment will soon be replaced with a regular keyboard and mouse.

Yes and no. A lot of that is already known. Most of these planes have been flying since the 70s so crew compliments, seating configurations aren't really classified. Most capabilities can be fairly accurately estimated by engineers trained to and they have has 50+ years to guess.
The real problem is how to stop it. Ideally they will be far from the front with enough fighters to cover it and enough radar to burn though any stealth capabilities of the opfor.

A lot of the stuff on it is when the screens are turned on. For the airshow here in OKC at Tinker AFB, got to walk my kids through the plane from front to back. They let my kids peak in the cockpit but the rest of it was really boring. Just a bunch of dark computer screens and airmen every 2 feet making sure you didn't monkey with anything. I have close friends that are AWACS pilots as well as ABMs and they get real silent when you ask them anything about the aircraft or missions they've been on.

I think it's what the system can do and show that's classified. I'm sure they gave a way to keep everything locked down on the consoles depending on how they authenticate. Not a mil person, but I assume you have to somehow authenticate to unlock the programing on the console that is classified. I'm guessing what's in the photo on the console is some basic diagnostic screen or maybe even a screen simply for putting on during airshow.
