You’d be surprised, one time I baked brownies with my friend and the only oil we had was olive oil and they came out tasting perfectly fine. Not sure how. I was very hesitant because I thought they would come out nasty and olivey. Guess it depends on what you’re baking.
Butter is a unique mix of water, fat, and solids that separates and strengthens layers in dough. Because it's solid ish at room temp it traps tiny air bubbles in the dough when kneading. It's also a bit acidic which works with the alkali in flour to make it a bit lighter and fluffier. When you sub olive oil for butter you get a greasy slab instead of a light flaky roll.
Brownies don't have this problem because they have a dense, oily, sugary crumb that's relatively uniform. They're also loaded with chocolate which has the same pH as butter and can serve some of the same role.
It's also better to use "Vietnamese" or "Saigon" cinnamon. It has a much stronger flavor than "Cassia Cinnamon". However it also contains high levels of coumarin (up to 1%), so shouldn't be used by those taking blood thinners.
I used to use it on orange rolls, before applying the orange icing.
There were some old Depression era to WW2 era Betty Crocker type recipes that had one substitute Vegetable Oil / Vegetable Shortening in place of butter in certain bake goods (like Banana Nut bread/loaf). Maybe these ladies had Mediterranean cooking habits to use Olive Oil instead of Vegetable Oils / Shortening. A noticeable amount of ‘Grandma’ type recipes came from that era
