I'm going to go look at a 2011 VW Jetta, I would like your guy opinions on if it's a good car/ good deal. It has 78k miles and is $6k. Are theas good cars and what are some common problems they have. Thanks for the advice in advance.

Gas or diesel?
I've had VWs from this era (well specifically 2000-2010), and honestly like them better than the newer stuff.
However, vacuum hoses are going to be an issue on a gasser.

How often do the vacuum hoses go out on theas.

They get brittle from age and heat.
I live in a hot climate, so that may be a factor.
But, there were constant vacuum leaks with my Jetta & Passat.

It's 2.5 SE gass

I have a 2013 SE 2.5L 5M. Great car. I bought mine before covid with 41k miles for $7k. So, your price seems high to me. Now, it has 140k.
It has normal maintenance issues. If you change your own oil, the 2.5 L uses a cartridge style filter, which is slightly more a pain to change.
I had issues with the throttle body failing 2x, but can be fixed easy. New OEM replacements can be found online for less than $100. It may be a good idea to carry a spare in the trunk, and the tools needed to swap it (pliers for air cleaner clips, and correct torx screwdriver for the throttle body). If one goes bad, you will be driving your car in limp mode.
The other issue I encountered was the aluminum AC lines acquiring stress cracks. I've had to replace more than once.
