if you come to İzmir, you should try sweetbread aswell. its something "inside" the kokoreç wrap. basically thymus or pancreas from calf or lamb. we call it "uykuluk" in Turkish. thats the REAL deal btw, you should try 100%

Unfortunately I only ate from reputable shops here, never cooked myself. It is also very hard to prepare by yourself with raw materials. Small intestines of lamb is tightly coiled around lamb fat and cooked above hot coal or wood fire. Roasted bits are then cut into small pieces and cooked further on a hot plate, a lot of thyme and preferably diced tomatoes and some other spices are added. I don't know where you live but you may find packed frozen kokorec in small quantities in supermarkets which is ready to be cooked on a pan.

Yeah you might ask local Turkish doner kebab shops, they would definitely know if any restaurant in the city sells kokorec or no. I believe it is hard to do such business in america due to regulations. And I believe regulators will have a hard time to approve when the business owner tells them he wants to sell intestines wrapped on lamb's ass fats as a delicacy. Or you may find packaged ones in Turkish food markets but I am not sure the taste would be the same. You need to come to Turkiye to experience it :)

I'm vegan and when I miss kokoreç I make it with oyster mushroom (istiridye mantarı, yaptak yaprak olan) and a shitton of spices. I've been told by various drunks that it was just as good.
You can tell the difference when not drunk though. I'm working on it.

Lay the "leaves" of the oyster mushroom on a pan. Cook 3 min per side. Finish with olive oil and spices.
The root kinda parts that don't lay flat are good for kokoreç. Chop fine like kokoreç. Cook on a dry pan. Finish with the unhealthiest seed oil you have (like cottonseed) and spices.
