I used to eat at Whole Foods hot bar all the time. This isn't over $30 and it's not remotely close to cafeteria food. It's overpriced for what it is, though it depends heavily on what you get. If you get proteins and veggies you can easily get a nice meal for under $15. But even when co-workers went hard like this pic, it was in the 20s. Not 30+.

At this point, it's all going to be Sysco. Mom and pops are getting priced out and people desperate enough to work in restaurants care less and less about food so buying Sysco slop is the natural path forward.
To stop it at this point you'd need a sizeable amount of people to stop eating out entirely. People voted with their wallets and this is what you paid for.

It's always been rather pricy, currently $12 per pound. The food pictured would probably be over $20. With that said, I used to go all the time and it's how you approach it, since it's by weight. You can easily make a solid meal for around $12-15. You just need to avoid heavy, cheap items like mac and cheese or mashed potatoes. People like this who don't follow that logic end up with a huge sticker shock at check out when it's weighed.

Is it actually hot, or is it a "hot" foods bar where stuff gets reheated in the morning and then is all room temp by 10am? Cause if it's genuinely hot, I assume you're eating it there or in your car or break room or something, so $20 isn't bad for a pretty large amount of hot food. Compare it to a buffet restaurant vs walmart frozen dinners.

Being in college with nowhere to go for the holidays, I’ve had many a whole foods Thanksgiving feast for surprisingly decent prices. I’d get $75 worth of turkey, gravy, and veggies and make a boxed stuffing stuffing and homemade mac/potatoes and eat well for 3-4 days. Therefore I will not be hearing Whole Foods hot bar slander, it made a lonely time of the year a lot better.

Because they don’t want to pay for the amount of labor needed to make everything in house. At my store we produce an insane amount of food in house every day - the kitchen would need to be staffed 24 hours a day with twice as many people if we wanted to produce everything in house and still keep up with demand. They won’t give us the labor budget to support that. Have you ever worked in a commercial/production kitchen?

I've worked in a Publix in the deli and have made the fried chicken and the deli salads and such from scratch. Go to a Publix and ask to see. They'll most likely show you the process if they aren't slammed. The salads, sides, pastas and other foods in the deli and hot bar are made on site except for items like olives and pickles items. Again....you know nothing about food service

I manage the kitchen at a Whole Foods in the Midwest. Some items do come premade (not from Sysco tho) like the Mac and cheese, mashed potatoes, and Indian dishes. Veggie options are made fresh, as well as the meatloaf, meatballs, fish, all chicken breasts, chicken and tuna salads, shrimp salad, etc. What’s made fresh varies from region to region but at least in the MW we still make most things in house.

I worked for WF in Denver for a few months, and a guy who I worked with used to work in the hot bar/kitchen area. He said regularly that a lot of the food on the hot bar is almost expired foods that they are making use of before throwing away. How true is this? Cooking something adds a few days to its shelf life, so it makes sense. If I have sausages or something that are looking worse for wear, I'll cook the whole pack and stick them in the fridge and they'll be good for at least another 3 days.

Occasionally we will put things on the hot bar that would be going out of date that day or the next day from the fresh pack wall or deli case, but it’s not super common at my store because we are so high volume. But yes, that is common industry practice for most kitchens and it is a good thing - it reduces waste! It’s not unsafe.
People cry about food waste but then want everything made fresh every single day. It’s not feasible for most places. Also, I think people forget that Whole Foods is a grocery store and not a restaurant?
