Because it's not a historical book, it's a fiction meant to entertain you. It's not meant to be realistic, just exciting to fuel your escapism from boring reality.

I don't get these takes, yea the show goes on because the people do, if you want a story to just end dramatically go watch a 12 episode anime not the one with over 1000 and complain about it going on for 1000 episodes.
I’m a One Piece fan (watched the entire thing up to now) and even I admit that the Anime is a FUCKING DRAG throughout most of it post timeskip. Nobody ever dies, fights drag on far too long, and holy shit every 3rd episode is filler now.
I actually switched to One Pace for most of the show because I was absolutely going to give up on it during Fishman Island
I can't really get into mainstream action shonen anymore. It feels like the MCU for weebs. People keep telling me to watch JJK, MHA, and Demon Slayer but it's like, I already saw DBZ. Then I saw DBZ with ninjas. I'm good, I don't need anymore of that. I'm too old to be watching the latest formulaic show just because it happens to be animated and Japanese.
It's power fantasy stuff with a level of separation because it's foreign. Allowing the reader/watcher to distance themselves from the perceived man-children who like Marvel. This can also apply to videogames: they don't like Activision/Ubisoft slop, they appreciate finely crafted Japanese games made with a level of care western Devs just don't understand.
Anime and manga fans will hate you for life I'd you dare suggest their favourite kids show doesn't measure up to folks like Dostoevsky, Shakespeare, or Hemingway.
Beware, if cornered they will attempt to squirt you with their defense ink of "Let people enjoy things!" or lash out with their retractable claws of "why are you gatekeeping?". The last line of defense is asking what you like or attempting to search your history to activate the personal attack card. It can be super effective.
I read a lot of manga and I would say Blame! is the single one manga that you could actually defend to academics as proper high art.
Otherwise stuff like Vagabond, Berserk, Dorohedoro, Dungeon Meshi, etc.. is a good bit above the slop, but its still all in the realm of good pulp literature.
I would say the comparison there would be more in the similar bleakness.
The reason I would claim Blame! as such high art is because of the way it depicts this post-singularity, transcendental bio-tech stuff. Its highly imaginative.
As a pokeslop enjoyer, theres nothing wrong with liking not so well written stuff. Plenty of reasons to like stuff even if the writing is subpar. But you need to be able to admit that its subpar, otherwise its disingenuous.

this is the big thing about anime for me. i do enjoy some of it, it is entertaining, the visuals are good, it can get invested into its cheesy stories, whatever.
but it is almost universally, pretty trash. horribly written. zero nuance. voice acting is always overdone. always juvenile.

i think anime/animation is simply an artform that, while obviously benefitting from good writing, is simply a visual medium. the writing can be mid, boring whatever, at the end of the day people watch it for the visual entertainment it provides, wether they admit it or not. if all you want is a story, you read a book or listen to an audio book. but people want the visual aspect only animation can provide.
frieren, as your example, has good writing for an anime, but i didnt just watch it for the story or the animation, but the whole package. so an anime can be a 10/10 anime while only providing a 7/10 story imo.
I only watch those to detox after a particularly gruesome ending or sad series, like akame ga kill or the straight abortion that was the non cannon ending of claymore
I second New Game! and New Game!! (second season) are really fun to watch.
The different characters are in different stages in life, and all have unique personalities. It's interesting to watch their dynamic, and how it changes with new people being brought into it.
All around a lighthearted, fun watch.

Luffy's appeal is that he is such an absolute idiot that he is able to see past all the bullshit of society and operate based in pure instinctual principles. He's a Nietzchean uber-mench, but stupid. He enforces his will upon the world and changes it to match his personal beliefs about what is right and wrong, and he does so by punching the people he doesn't like. He doesnt need a moral struggle, he doesn't need to "examine his beliefs". He is beyond moral struggle and introspection.
If you're a bad guy I'm gonna beat you up, simple as.

This is why One piece and Fairy tale protagonists are written like that.
