You would be surprised. I work with seniors providing home care. Lots of blind people do all the same things we do every single day. I had one lady that made the very best oatmeal and coffee I've ever tried (on the stove) every morning before I arrived. If no one told you, you would never have guessed she was blind. Don't ever assume people are incapable. Having a disability doesn't make you useless.

I lived with my blind aunt for a bit growing up, great cook, much better than my mom who has eyesight.
The blind tend to adapt to be able to do pretty much everything they used to be able to do, except maybe drive.

I just don't agree with this. Cooking is fun... if it's a hobby. Like most things, if it becomes an everyday chore the fun gets sucked out of it for most people. Or if someone does it as a career, working in a professional kitchen is extraordinarily hard, and a lot of people burn out on it and no longer find it fun. Like I said, most people, not all... I'm sure some manage to maintain their passion for cooking for life (I'm envious).
I cook breakfast & dinner/prep lunch for 3 meals a day, 7 days a week for me, my husband, and my 3 kids. I hate cooking. I used to love cooking with my best friend's babcia as a kid: going from easy bake oven to homemade pierogis was revolutionary. Nowadays, not a single recipe on this planet would be "fun" for me. I cook because I care about my health and the health of my family but I'd be lying if I said I don't miss being a college kid eating cup noodles and hot cheetos and chasing it down with my own tears.

put a little oil and seasoning (can even just be salt/pepper) in a pan with the potatoes and onions and fry them for a little bit, no more effort than boiling them but a lot tastier. could even probably cut up the hotdog and toss it in there and it would come out good. i’m new to cooking too but tossing food + fat + seasoning in a pan almost never turns out inedible

One day when the thoughts of mortality and meaningless existence really start to hit you, I want you to learn how to make a decent pasta dish in one pan. Red sauce, cream, chicken or shrimp.
Focusing on every part, doing it well, and then cleaning everything as if all your things are powerful tools to be taken care of. Getting better at making it every time, understanding how to control the texture and flavor of every component.
Its a simple thing to make with only a few ingredients, one pan, and maybe 30 minutes of time, only after you've mastered it.

Covid in NYC was overkill. Burnt out. So bad we had volunteers and the military helping do our job. 12-16hr shifts.
Job was far from easy.
Imagine having to do UPS(picking up cases… aka people)
Bring back.
Do several autopsies for the afternoon to the rest of your shift.
(Bonus points, imagine going into buildings with broken or no elevators… basement folk…. Tub folk….. horders… family members at scenes….) these were the downsides that I really really hated with a passion.
Job was interesting and I did like it.

Start small with basic stuff and watch videos. I promise it’s not nearly as difficult. When i learned to cook i started with breakfast foods because they’re generally fast and require little work. And if you mess it up no biggie you didn’t spend 40 bucks on nice ingredients for a dinner. My wife can’t cook for shit unless it’s pasta and hardly consider that cooking. But she just refuses to learn through trial and error. Don’t be stubborn. Learn to cook or you’ll have to rely on others and who wants to rely on others for a basic skill?

My advice is to get yourself a beginners cookbook. I'm sure that you have friends or family that you can ask for help, and some basic lessons. And one of the best fuckin products of our modern age, YouTube university! Start with the basics and work your way from there. You may not become a gourmet chef, but you can learn enough to get by. why not look for low effort recipes? there are plenty of tasty things you can cook by putting everything in a pan and letting it cook in the oven for a little while. one of my favorite low effort dinners is just some chicken (usually thighs or drumsticks) cooked in a toster oven until crispy with some chopped potatoes on the same pan. i usually use ranch seasoning, but other seasonings work too. there's also another simple recipe i like for a a one pan casserole

Just learning how to cook ground beef, which is impossible to mess up, throw already diced onions in, grab some frozen veggies and pre cooked rice. Like just that is bare minimum. And you should atleast know how to do that.
Personally for me, my ex wife cooked quite a bit and was very good at it. When we got divorced I learned how to cook and my next girlfriend did not at all. I remember over the years the resentment built up that she didn’t have such a basic skill down. Ultimately we didn’t work for other reasons. But something to think about. Also, maybe invest in an instant pot. Those things are amazing for one pot recipes, throw and dump recipes, slow cooker. Super easy stuff!
