From what I remember they start with a thin springy wire that moves the teeth a lot in a short time. AS the teeth get closer to straight they move to thicker wires. The final wire has a square cross-section so it can put a twisting? force into the teeth. Once in their final position they need to be kept there for a while.
They should have told you about timelines at the start. 1-2 years would sound normal to me.

Every tightening should cause sensitivity to the point of it hurting to eat soft foods

Do you feel pressure on your teeth when they have been adjusted?

zero pressure

That's not normal, day 1 is agony, something isn't right, you should be in constant excruciating pain!

It does take a long time, but you are the paying customer and you should be able to speak up with the dentist. You’re paying they are working for you. If they go too fast though you run the risk of the teeth pulling loose. Next adjustment appointment say you were expecting a bit more movement by now, do you think you could maybe adjust them a little tighter. Hear what he suggests and they reasons if it’s not possible for you treatment. He might be holding back as to not cause you discomfort.

If your teeth are moved too quickly, you risk damage to the teeth and bone so things are done slowly. If you're older, they'll move slower.
The way braces work is they'll expand the arch to make space for the teeth, then they'll align the teeth and bring them closer together. You're most likely still in the expansion stage.
You'll be paying a fixed amount, they won't be scamming you out of extra appointments.

Memories of braces as teenager: it hurt after getting them adjusted for a few days after. I feel like you would notice this after the adjustments.
It also depends how severe your teeth are. My pre braces teeth were horrific and I wore braces for about two years before they were fully straightened out. Did the original clinician give you an expectation of how long you'd wear them for?
I made the mistake of not wearing my retainer, and dropped the money as an adult on Invisalign. That involved changing the retainer every week or two (maybe month? I forget the exact time frames now) and that hurt after changing them too with the pressure. At least with Invisalign I could lay out the retainers and see the difference/expected difference over time.
