It's not completely shitty. That's garlic bread with a homemade chickpea "tuna" salad, homemade vegan ham and basic bitch cheddar.

Sriracha has had a bastard of a time keeping its sauce the same color after they mega-shafted the growers they'd been using for decades. Now you can never tell what color you're going to get.

Sriracha is a generic term, you’re thinking of the manufacturer Huy Fong who tried to fuck over Underwood Ranch.
There’s a million better sriracha’s that Huy Fong now, including Underwood Ranch’s own sriracha that’s really good. Yellowbird is also good, just anybody over Huy Fong now.

Which is pretty much any ripened fleshy red pepper. Huy fong used jalapeno. Serranos are fine. Sriracha isnt a kind of pepper, just a place where the sauce came from.

Yep, it's the rooster brand one. It's probably the lighting that's making it look like that. I don't have the lights on. I just have natural lighting from the widow and it's still morning in the west coast.

the rooster brand tried screwing over their chili provider here in california, leading to a big legal dispute.
the farm started making their own version (which was great but now discontinued) while rooster had to settle for different suppliers which is why their sriracha looks weird now.

I used to tolerate about the same kind of bruising/greying on my avocados as to not be wasteful, but now try to cut/scoop out the more gnarly ‘rotted’ looking parts because I noticed it affected the flavor more than I thought.
If you want to help with the visuals I’d recommend mashing it up in a bowl with a fork, and then spreading it over. It looks better than seeing individual slices with grey spots.
Also don’t buy avocados with the stem cap (the little ball you can pop off at the top) removed if you can because it’ll start oxidizing earlier there too.

I know. I used to work in fine dining as a cook and know how to make a plate presentable with less than ideal ingredients. You'd be surprised by the stupid high mark-ups in some fine dining restaurants and catering companies considering the ingredients used. Not all, but a lot of them including the ones I worked at that were successful and well known. This food is just for me though and I didn't care enough to cut out the black parts or make it look more edible. I was gonna drown it in Sriracha anyway.

I made a big batch so it's just 2 drained cans of chickpeas mashed with a fork and made using the regular tuna salad ingredients. I used kewpie mayo, kimchi, homemade red chard stem pickles, whole grain mustard, more Sriracha, and furikake to give it a little more of an ocean-y taste. It's absolutely nothing like tuna salad in taste or texture but it's pretty good. Great for me since I'm diabetic and chickpeas are low on the glycemic index and high in protein. This stuff keeps me full for a while, even with weed munchies.
