Do Airlines and other professional pilot jobs care about the GPA you had in college?

I'm doing flight school and an online college program on the side and I'm fighting for my life to hold a 3.0, how much would it matter whether I finish with a 4.0, 3.0, or 2.0? For more context it's a bachelor's in Aviation.

Delta is notorious for caring or at least asking. If it's an aviation program and you can't hold a 3.0 in it, especially an online one, that's going to at least be a question you get asked for sure.

Depends on the airline. I had to go all the way back for my high school transcripts when I went to Atlanta, and I graduated a painfully long time ago. Can't remember if my regional asked, but I wouldn't be surprised if they did.
