Here are a couple examples for you. 6.2 Detroit diesel has 240lb-ft, 7.3 IDI has 338lb-ft.
5.7 Hemi, 5.0 coyote, 6.2 LS all have more torque. Gas is cheaper, replacement parts are cheaper. Better fuel economy when comparing these engines

Not really. For starters they're all 30 year old engines being compared to more modern engines, secondly if it's low end grunt you want they are still superior because peak torque on both the 6.2 and 7.3 diesels come on at less than half the RPM of any of the other engines listed.

Cost savings are miniscule when maintenance is vastly more expensive and the diesel adds a $10-13k upcharge. On fuel costs alone, a diesel would have to get 25% better gas mileage for me to be breaking even versus my gassers. They just aren't. Nevermind triple the cost for every oil change, the added cost of DEF, the fuel filters, the extra cost of maintenance parts... Injectors for my gasser cost $400 to do a full set. That's what a single injector for the diesel would cost. One.
Torque is a problem best solved by gearboxes. Power is what matters for performance of all sorts, and gassers do just fine there.
I am jealous of modern diesels for their exhaust braking setups. That's the only real advantage that I think is worth the tradeoffs.

Okay let’s compare apples to apples then. Would you rather have the 3.0 eco diesel in a ram 1500 or a 5.7 Hemi in a ram 1500?
My follow up question would be, have actually towed any significant weight with both?
Because I have, I tow boats for a living at a marina and I’d pick the 5.7 all day. In fact all 3 of the people I know that owned a 3.0 eco diesel traded theirs in for a 5.7 within 2 years for the same reason

Who wouldn't want a heavier, more expensive engine? That runs on more expensive fuel? And has to buy DEF on top of that fuel? DEF that goes into unreliable emissions systems that break frequently?
I'll suffer with gas, thanks.

Average age of a vehicle is about 12 years in the US and they’re usually on their second owner at that point. Average miles/year is 11-12,000. So most people are owning their cars for 5-8 years and putting 60-80k miles on them.

Even then, I’d argue that’s not the case for many. Dpf’s, high pressure fuel pumps and injectors are fucking expensive. All it takes is one common failure to happen and all of that fuel savings is gone.
