Most people haven't spent fifteen years in tourist trap kitchens cooking whatever odd shit the billionaire owner decided to fly down. ( my first interaction with fiddlehead was in florida btw )
But tonight it's straight greens on mickeys face with a suspicious yellow sauce.
And yes many mainers are jelly right now. Mostly cause I didn't pay seven bucks a pound. It was free from a friend. :p wicked.

Oh I don’t care about the sub lol, just saying that fiddleheads are delicious and expensive when bought. I’m always stoked to see them online because there are still so many people who have no idea they exist. I’ve never bought them. There’s a spot near my cabin up north we pick them from each year.

Fiddlehead, or Ostrich Fern, is an edible fern that has a short harvest time in early spring. Taste a bit like broccoli and asparagus.

Basically it's the bud from an Ostrich Fern. Harvested when curled before they release their spore, they kinda taste like asparagus

Blanching usually done for to extend the lifespan. Boil or steam for at least 10 meanta and get rid of the water.
If you don't blanch the buds they last barely a week.

Ostrich Fern buds, known as fiddleheads, are a green that has a very short harvest cycle. It's also not got a great shelf life so generally it's a foraged item or someone dedicated a greenhouse for their own appetite.
Most ferns are toxic but ostrich fern buds can be eaten, but you do have to boil or steam em first. Kinda taste like asparagus and broccoli had a love child.

Sorry I was asleep, so basically always make sure to properly identify the species, especially since ferns are usually toxic. This is an Ostrich Fern, (Matteuccia struthiopteri) that we harvest fiddlehead from. They still have to be boiled or steam to eat safely and you shouldn't reuse the water. My advice if you want to pick up foraging for tasty treats is to look up a trusted forager at a local farmers market. Always go with local knowledge.
The gentleman who grew this in his greenhouse had already cleaned and blanched them for us.

No, it's only Ostrich Ferns that are good for these. Other ferns like Bracken ferns will be even more toxic, and carcinogenic. Your best bet it to find a farmer's market with a booth that has foraged them. It's a very short season that they are available though

I'm in coastal New Brunswick. I basically trip over them. They're everywhere out here. I can buy them at every chain grocery store, from farmers markets, and roadside stands. They're rarely seen elsewhere though.
They're vaguely asparagus-like in taste.

It's a type of fern, ostrich fern. And a local guy has a greenhouse for em and brought a pound for me and my mother, already blanched. Mostly though you have to find a forager who knows a safe patch because a growing operation for Ostrich Fern takes about 3 years to set up, but can be harvested every spring. You have to either steam or boil em before anything and *do not save the water, it's too bitter to do anything with.
They look like that because that's the green shoots that are about to uncurl and unleash the leaves that carry the fern spores. Either hit up a local farmer who foragers or check you farmers market.
