For those of you have restored a car from the ground up, or those familiar with the industry..

What's the best way to deal with the interior metal? I'm going to sand blast the car.

But idk how many coats of epoxy, should I top coat with single stage? When to do the seam sealer and should it be top coated? Do I want black or can I leave in epoxy grey. I'm afraid of the grey showing through the interior.

I don't want to body paint the interior.
