Was gifted a cheap Ebike for Christmas, 5 months in and the disc brakes it came with are now merely a hint of brakes and bike is now a death trap. Would like to replace the whole brake assembly with something better and that would last much much longer. Any suggestions on brands and models?

5 months isn’t too bad depending on use - you might consider starting with a pad replacement. Otherwise agree with the Shimano recommendation.

5 minute commute to and from work 4 days a week with a monthly 30 minute round trip to the pharmacy

No,it isn't.
Brakes are a nightmare. There is very little consistency in mounting them and you end up with a collection of adapters, none of which are quite right.

Shimano br mt200. Cheap but quality well tested product. Will last the life of the bike. Easy to bleed and cheap very accessible pads.

Shimano MT200 is the answer. Inexpensive but still high quality. Been mountain biking on some steep stuff with MT200s. Granted I had 200mm rotors and improved pads (Galfer e-bike pads) but they provided plenty of power.

What exactly is the issue? Are the pads worn down? Is the disc itself having issues? Fluid or brake cables not working? Replacing the whole assembly seems excessive unless something that can't be fixed is broken.

Don't buy cheap disk rotors from AliExpress like I did they are still working but I have to adjust the pads all the time

You need to check the condition of the brake pads first. Are they squealing and making metallic scraping sounds? How many miles are on the bike?
Are your brakes hydraullic or mechanical. Mechanical brake cables stretch over time and need to be adjusted.
If your brakes were working well 5 months ago, you just need to maintain them, not replace them.

Try a higher quality compound break pad before full change out. The compression ratio is important but brake pad construction matters a lot and is very noticeable when you move up in compounds.

Sell it and buy a decent bike not top spec but a brand name as you will be forever chasing your tail upgrading ang trying to buy parts

I would start with replacing the pads and yes you have to get ones that are compatible. I can’t see the rotor being a problem at this point.

You mean switching the actuation system, or a complete system replacement? Cus changing pads on a disc is very easy, an unless your changing from cable to hydraulic there isn’t really a reason to replace the whole system.
