If it is not very windy, leaving the yoke is ok, since they are pretty much useless below certain speed but this guy's body language screams complacency.
To play devil's advocate, his behaviour mightve been affected by the person recording in the cockpit. Using myself as an example, sometimes I drive in pretty unoptimal ways, if someone I'm trying to impress is in the car
Getting paid to fly an airplane with 200 passengers isn't the same as going on a joyride in your car with your crush. What you described is unprofessionalism in aviation and one of the things that can get you in a very bad place.

You might get away with it when it's not windy but I've never seen a professional pilot taught to just drop the yoke regardless of conditions.
