Where do Kebab houses get their Chillis?

Dumb question but I have not been able to find the chillis you get on a kebab anywhere. Costco have a big jar but they are quite thin and not the same. Also tried the main supermarkets with no joy. If any one has an online source greatly appreciated.

Most will be using what I call 'birdseye' or 'finger' chilli peppers.

Definitely not birds eye, those are way hotter than what is used in a kebab and are used in Thai food
They'll be something more similar to a banana pepper, which are around the 500 scoville level whilst birdseye are more around 50,000+

The peppers traditionally are a variety unsurprisingly called "Turkish Pickling". Not all places use them, but they're the original. Usually pickled in a vinegar brine with garlic.

I like the ones they sell in Lidl under their Greek brand, the Melis ones are weirdly waxy by comparison

Just ask your local kebab place for some! I did this just the other day, and have been doing it for years. One place years ago charged me £1 for like a full burger box amount. But the other day, which is my local, gave me the same amount for free. Literally walked in ready to give him a few quid and he basically handed me the box and said see you next time for your donner kebab lol

I have had reasonable results from Brazilian, Turkish and Baltic corner shops in London getting the pickled ones. Brined ones aren’t as nice

Do you have a market (or temporary market stalls) near you? Sometimes you get market stalls with blokes selling stuff like olives, Turkish delight, pickled garlic etc and they usually seem to sell those chillies.

Failing that, there's a takeaway wholesale place where I live, they sell everything from kebab meats to pizza boxes in bulk so I'd imagine somewhere like that

Sainsbury's do them in jars, I know because I used to buy them. But they're still no way near as fat as the ones you get from the kebab shop. Similar to how supermarket pickled onions aren't massive like the fish and chip shop ones.

If you have Farm foods nearby, try them. My local one always seen to have a large selection in those same bottles they use in kebab shops
