Everyone I’ve ever met asks for bacon well done, yet invariably cafes serve it soft/underdone. Am I missing something?

Yeah I saw a vid the other day to make "perfect" bacon and it was basically crackling, I don't think many people want that in a sandwich or a fry up. It has it's uses, maybe crumbled over something, but in a sandwich or fry up I want it seared but not crispy.

At a minimum the fat needs to be rendered. I can't stand bacon where the fat is like chewing an elastic band.
I think in cafés and buffets where there's really high turnover they don't really have time to cook it so thoroughly. They just cook it enough to be safe to eat

My father in law thinks bacon isn’t bacon unless it’s laden with fat. His words a few years ago when I was cutting some fat off post cooking ‘the fats the best bit, where all the flavour is’ lol

Soft bacon is fine if it's smoked at least some flavour, if it's unsmoked and soft then it's only good for like egg buttys etc.

No and I’ll rarely order a bacon sandwich/ roll in a cafe because of that even when I ask for it well done they don’t do it well done enough

Soft bacon used to be the norm. I think crispy bacon was an American thing that became popular later here when it was added as a topping to salads and burgers.

Definitely. Crispy bacon is fine crumpled over the top of something like sprinkles, but for sandwiches, breakfast, etc, bacon should be meaty.

I like it the way Toby Carvery does it. It's almost sort of glazed and quite chewy. Can't cook to save my life so I know nothing about how they achieve that, but I know I like it.

I don’t know what this is. I’ve never been asked whether I’d like my bacon rare etc. If you’re going somewhere they’re undercooking bacon, report it. It’s dangerous.
Bacon should have soft meat. If it’s too chewy, they can’t cook. If it’s too dry and crispy, they can’t cook. If they serve destroyed bacon like they have in America, get it taken off the bill.

Has to have the fat browned - doesn’t need to be crispy as such, just “well done” (and if you ask for crispy, you’ll invariably get American style)
Hate it when I’m in a hotel with a buffet and the bacon is all limp and pale with loads of oozing white rind. That’s all getting cut off and binned.

The best type of bacon is where the fat has rendered, and it’s been unevenly cooked with crispy bits that have had direct contact, and softer bits that have been almost steamed

I like crispy bacon as a topping, but prefer it softer in a bacon sarnie. Really, soft is the default because that's just 'cooked' - any more and you want it 'well done' or 'crispy'. Obviously some places take their default longer than others, which is why people swear by some cafes over others...but I definitely wouldn't be considering 'soft' bacon to be underdone...though it can definitely feel it when you have un-rendered, stringy fat.
The beauty is, it's versatile enough to accommodate everyone's tastes - you just have to ask.
the real separator in my opinion is the quality of the bacon - crispy bacon can 'save' cheap bacon, but high quality bacon wins the day at any level of done.

Prefer it anywhere between chewy to crispy. Hate it when you order a full English and receive a couple of rashers that look like they've been warmed up on a 30 degree spin cycle.

I like crispy, not crunchy. You have to have the fat rendered out at a minimum, but cook it for a minute or so longer and you've get a nice snap once it cools down. Cook it for 30 seconds more after that, and you get crunchy burnt parts which aren't very nice.

I prefer crispy but I know a few people who don't, I wouldn't be surprised if there's no strong majority either way.
It's easier for somewhere like a cafe to just cook them until done for the sake of speed, you can always cook it more if you need to. Anytime I've asked for my bacon well done it's not been a problem.
