E-Bikes for heavier folks.

Hello! I am on the heavier side and looking to get healthier. I am currently at 380lbs and was looking to get an E-Bike - the plan is to pedal to the local gym for a light cardio workout, and have the motor lug me back up when I am leaving the gym completely spent.
As you can imagine, due to my weight, I need a very sturdy, likely fat tire bike that can support my weight without any damage to it while simultaneously managing to somehow lug my way too big self around when needed.
I've been given a suggestion of Mokwheel Obsidian 2.0 with the step-over frame as it supports 500lbs loads (so lets me even load up on some groceries sometimes). I've also been told that this is one of the best e-bikes at that price point (around 2200+tax).
I would appreciate the verification of previous statement as well as any other suggestions you good folk have. As a note, I am willing to spend around 2200-2500, but if you believe your suggestion is truly worth the price above that bracket, then feel free to toss it in the bin.

I know this isn't the answer to what you are asking, but just so you know you are not going to want to pedal a fat tire ebike. It is not a fun or easy experience, especially at your size.
Now, having said that, your plan is good, simply riding your ebike to the gym will be fun and a good motivator to go. I hope you find the right bike, best of luck.

I have one, it's an e-bike at the end of the day.
Pedalling it with a dead battery is not a good time, but it's basically effortless to pedal these.

Look at the Velotric Nomad 2 and Gomad each rated at 505 lbs total rider and cargo
