Protect the engine from rocks coming from beneath
I thought about getting big sheets of aluminium but I'm seeing more people are doing it with sheets of plywood?
What if I got a cheap ping pong table instead?

Plywood under an engine sounds like a recipe for a car fire.
Rally boys these days use composites very similar to bulletproof armour as they're light and very strong, before that it was hard grades of aluminium, steel, or titanium if you're big budget.
Some plastics can work but you need to be wary of heat and the fact they can flex a hell of a lot when hit, even if the plastic doesn't break it may move far enough to still cause damage.
As with everything it's a trade off - cost, weight, performance, suitability.

I'm not really rallying the goal for me is just to have a flat undebody for aero, And deflect small rocks
I could have the front in aluminium ig, and the middle and rear in plastic ig

Amateur rally cars use rolls of sheet plastic for underbody protection.

Ping pong tables are usually MDF and they do not like moisture at all. If you were going to use wood I’d try 1/4” marine grade plywood. You could coat it with fiberglass resin when it’s finished to strengthen and waterproof it.

its going to be a lot of added weight with aluminium or plywood, and way too strong for road use
usually this is made of fiberglass or carbon fiber
