Advice needed on using old PC components for a Plex media server!

So I have a few PC components lying around since I built a new PC two years ago from scratch. I put the Motherboard, GPU and PSU in the boxes of the new components for safe keeping. The CPU is still on the motherboard with a stock cooler on it. With steaming services going bananas I was thinking of repurposing them for a Plex media server but I need a little help, since I only have experience with building PC's for gaming.
What I have:
CPU: Ryzen 1700x
GPU: EVGA 1070 FTW
Motherboard: MSI B350 Tomahawk
PSU: Corsair CX550M
RAM: 2x8 sticks of Ballastix DDR4 RAM (3000Mhz)
Can I just use this or do I need to change anything out? The components themselves are around 9 years old by now, and I worry especially about if the PSU might be too old and if I'm better off changing the motherboard.
I have to also buy storage since all the storage I had is in the new computer. Should I just go all HDD or should I install the OS on a faster drive like m.2 or an SSD (if I recall correctly my motherboard does support m.2 but speed is capped) or should I also upgrade the motherboard?
I plan to run a Linux distro on this computer, though i'm still looking at which one. I'm thinking about using Ubuntu since I have limited experience with it via work, but if there is a better distro out there for my use case, let me know.
And I need a new case that isn't too flashy since this thing will probably sit in the living room, so any recs are more than welcome.
Please let me know what you would do with these components or if you need more info!

You could just use those parts. I would consider selling the 1070 and buying an ARC A380 for $140. This will give you better power efficiency and hardware AV1 decode/encode.

If you plan to have a big media library get an SSD, it helps with the loading speed of preview images. SATA SSD is totally fine, see what you can find used/cheap.
Plex is officially supported on Ubuntu or Fedora, pick one of those.
Fractal Design R5 is a bit expensive but looks good and holds 8 3.5" hard drives stock, up to 16 with basic mods.
