Does anyone have recommendations for a good pot & pan set for a gas hob?

I’m in the Uk, me and my fiancé are moving to our first home and need some good quality pot and pans, hopefully to last a while, we have a gas hob and the budget is about £500, I’ve been looking at the ninja 7 piece set in the stone colour as I would like a beige, or silver colour however they are out of stock everywhere and after reading reviews I’m not 100% sure? All and any recommendations will be helpful! Thank you in advance! x

We like stainless steel and have a large saucepan and frying pan from ProCook and a couple of smaller ones from IKEA 365+ range. I can’t really tell any difference in quality between them tbh, they’re all great.
I was concerned about food sticking but generally we haven’t had any issues once we changed our technique slightly. I keep a non stick pan for pancakes and fried eggs but everything else I do in the stainless steel.

What type are you using for eggs / stir fries ? And how heavy are they ?
I usually have TEFAL pans but the non-stick coating sucks with gas stove (probably on me) but they're pretty light and I can't lift heavier pans most of the time because of wrist pain issues -_-

I only have the saucepans, they are definitely on the heavy end of spectrum. Wok and frying pan came from a catering supply company, both heavy but again both long lasting.

You'll definitely want one or two oven safe ones you can start something on the hob with (browning meat / softening onions) then transfer directly into oven. We have a tall cast iron casserole pot and shallower two handed pan.

Generally, good pots and pans aren't found in sets - you instead accumulate them over time. If you do buy a set, you'll notice you never use most of the pans.
Start with a stainless steel saucepan, and work out what you need from there.

I'd suggest getting 2-3 good quality stainless steel saucepans and a decent nonstick frying pan (fwiw, I have one of the ninja ceramic ones and I like it) to start. Possibly, if you'll use it, a non-stick milk pan instead of one of the SS saucepans. The SS pans will last much longer* than any type of non-stick surface but there are times when only a non-stick surface will do :) You can successfully cook eggs (fried, scrambled) in a SS pan but there's a bit of a learning curve. I CAN do it, but I don't. If you like steak/chops etc then consider a cast-iron or carbon-steel pan for the best sear.
My SS pans are by Stellar fwiw: you can check out sites like Harts of Stur and Procook for quality at reasonable prices. Look for tri-ply.
If your heart is set on a set (!) go for it, but my honest advice is start with less and see what you need as you go on.
(*I only replaced the SS pans I bought in 1990 after 33 years because I was changing from gas to induction and my old ones were good SS but not suitable.)

If you’re near outlets, go in store, but if not online is fine. Grab whatever you need from Pro Cook Stainless Steel Elite triply range.
Make sure it’s the uncoated stuff.
Could recommend other brands but pro cook is decent for the money with good customer support.
You do have the budget to consider some other brands if you want recommendations but as a starter, Elites can easily last you for life.
